Yield 3 1/2 cups

Number Of Ingredients 11

1 12-oz. bottle Guinness Extra Stout
1 1⁄2 cups brown mustard seeds (10 oz.)
1 cup red wine vinegar
2 tbsp. honey or brown sugar
1 tbsp. kosher salt
1 tsp. freshly ground black pepper
1 tsp. minced shallot
1⁄4 tsp. ground cinnamon
1⁄4 tsp. ground cloves
1⁄4 tsp. ground nutmeg
1⁄4 tsp. ground allspice

Steps:

  • 1. Combine ingredients in a nonreactive mixing bowl. Cover with plastic wrap and let sit at room temperature for 1-2 days so that the mustard seeds soften and the flavors meld. 2. Transfer the mixture to the bowl of a food processor and process, stopping occasionally to scrape down the sides of the bowl with a rubber spatula, until the seeds are coarsely ground and the mixture thickens, about 3 minutes. Transfer to a jar and cover. 3. Refrigerate overnight and use immediately or refrigerate for up to 6 months. (The flavor of the mustard will mellow as the condiment ages.)

GUINNESS MUSTARD

This comes from the March 2008 edition of bon appetit magazine. DH really liked this mustard on sandwiches. It needs to be refrigerated. The 2 hour cook time is the refrigeration time before use. Other stouts would work in place of the Guinness.

Corned Beef Sliders on Potato Rolls with Cabbage Slaw and Guinness Mustard Recipe - (4/5) image

Provided by á-75862

Number Of Ingredients 24

SLIDERS:
12 slider-sized potato bread rolls
1 1/2 to 2 ounces sliced corned beef
1 1/2 to 2 teaspoons Guinness mustard (ingredients below)
2 tablespoons coleslaw (ingredients below)
COLESLAW:
1 (16-ounce) bag coleslaw mix
2 tablespoons onion, diced
2/3 cup mayonnaise
3 tablespoons buttermilk
1/3 cup white sugar
1 tablespoon white vinegar
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon poppy seeds
GUINNESS MUSTARD:
1/2 cup whole grain Dijon mustard
3 tablespoons regular Dijon mustard
3 tablespoons Irish stout beer (like Guinness)
1 tablespoon shallot, minced
1 1/2 teaspoons light brown sugar
pinch of ground nutmeg
pinch of ground allspice

Steps:

  • To prepare the cabbage slaw, combine the coleslaw mix and onion in a large bowl. Whisk together the mayo, buttermilk, sugar, vinegar, lemon juice, salt, black pepper, and poppy seeds in a medium-sized bowl until fully combined. Pour the dressing mixture over the coleslaw mixture and toss to coat. Chill at least 2 hours before serving. To prepare the mustard, whisk all the ingredients together in a small bowl until well blended. Cover and refrigerate for 2 to 3 hours. To assemble the sliders, spread the mustard on both sides of the roll. Spoon a dollop of slaw onto the bottom half of each roll, followed by one or two slices of corned beef. Place the other half of the roll on top.

Tips:

  • Choose the right mustard. There are many different types of mustard available, so it's important to choose one that will complement the flavor of your dish. For example, a grainy mustard will add a bit of texture and spice, while a smooth mustard will be more mellow.
  • Use fresh ingredients. The fresher your ingredients, the better your sauce will taste. This is especially true for the mustard, which can lose its flavor over time.
  • Don't be afraid to experiment. There are many different ways to make a Guinness mustard sauce, so feel free to experiment with different ingredients and flavors. For example, you could add some chopped herbs, spices, or even a splash of red wine.
  • Make sure to taste your sauce as you go. This will help you adjust the seasonings to your liking. You can also add a bit of sugar or honey to balance out the sourness of the mustard.

Conclusion:

Guinness mustard sauce is a delicious and versatile condiment that can be used on a variety of dishes. It's perfect for grilled meats, roasted vegetables, and even fish. With a few simple ingredients and a little bit of time, you can easily make your own Guinness mustard sauce at home. So next time you're looking for a new flavor to try, give Guinness mustard sauce a try. You won't be disappointed!
