This is from the current Bon Appetit magazine, in the Fast Easy Fresh section. I fixed it for dinner tonight and we really enjoyed it. The coating is crispy and satisfying, and the tartar sauce is very good. I hope you try it and enjoy it as much as we did!

Number Of Ingredients 9

1/2 cup mayonnaise
2 1/2 tablespoons chopped fresh dill (I used about 2 t dried)
2 tablespoons drained capers
2 tablespoons chopped fresh chives
2 tablespoons finely chopped cornichons or 2 tablespoons dill pickles, plus 1 T pickle juice
1 1/4 cups panko breadcrumbs
1 large egg
1 1/2 lbs halibut fillets, cut into 3 inch strips
3 tablespoons olive oil

Steps:

  • Mix first 5 ingredients in a bowl. Season with pepper.
  • Cover and refrigerate tartar sauce.
  • Spread panko on a plate,.
  • Whisk egg in a small bowl.
  • Sprinkle fish with salt and pepper.
  • Working in batches, coat fish with egg, then panko. Shake off excess.
  • Heat 1 1/2 T olive oil in a large skillet over medium heat.
  • Add half the fish and cook, turning often (I only turned once and got a very nice crust), about 4 minutes total.
  • Transfer to a plate and keep warm. Repeat with remaining fish and oil.
  • Serve with tartar sauce.

2 cups panko (Japanese coarse bread crumbs)
1 cup all-purpose flour
2 teaspoons kosher salt, plus for seasoning
3 large eggs
Freshly ground black pepper
Corn oil, for frying
Tartar Dipping Sauce, recipe follows
2/3 cup mayonnaise
1/4 cup sweet pickle relish
Freshly squeezed juice from 1/2 lemon (about 1 tablespoon)

Steps:

  • Prepare a paper towel-lined baking pan and set aside. Cut each fillet into 1-inch strips. Toss the panko, flour, and 2 teaspoons salt in 1 shallow bowl or pie plate, and beat the eggs lightly in another.
  • Heat about 1/4-inch of oil in a large skillet over medium-high heat. Season the fish all over with salt and pepper, dip in the eggs, and then press into the panko mixture to coat evenly, shaking off any excess. Carefully place the fish in the hot oil, taking care not to crowd the pan. Adjust the heat as necessary to maintain a constant sizzle. 2 pounds halibut, cut into sticks about 3 inches long and 1/2 inch thick
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
3 large eggs, whisked
3 cups panko breadcrumbs
1/2 cup mayonnaise
2 tablespoons chopped pickles
1 tablespoon capers
2 teaspoons white wine vinegar
1 teaspoon grain mustard

Steps:

  • For the fish sticks: Heat about an inch of oil in a heavy saucepan over medium-high heat until a deep-fry thermometer inserted in the oil registers 360 degrees F.
  • Heavily sprinkle the fish sticks on both sides with salt and pepper. Form an assembly line with the flour, whisked eggs and panko breadcrumbs in separate shallow bowls. Dredge the fish sticks first in the flour, making sure to remove any excess, then in the egg wash and finally in the panko.

3 cups corn flakes, preferably organic, plus more if needed
1/2 cup buttermilk (shake before measuring)
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 lb cod fish fillet, cut into 2 x 4 inch strips (or red snapper)
3/4 cup Dijon mustard
1/4 cup honey
1/2 teaspoon fresh lime juice

Steps:

  • Preheat oven to 425°.
  • Using your fingers, coat a 13 x 9 inch baking sheet with olive oil.

2 (8 ounce) steaks halibut
½ cup white wine
1 teaspoon chopped garlic
