2 -2 1/2 cups ham, cooked and diced
1 lb broccoli, chopped (if using frozen rinse under hot water and drain VERY well)
1/2 cup onion, peeled and chopped
1/4 cup red bell pepper, seeded and chopped (can use jarred pimientos instead)
1 cup sharp cheddar cheese, shredded
1 cup swiss cheese, shredded
1/2 teaspoon mustard powder
3 cups low-fat milk
4 eggs, lightly beaten
1 cup Bisquick baking mix

Steps:

  • Preheat oven to 350°F
  • Lightly grease/spray a 13 x 9 baking dish.
  • In a large bowl, toss together the ham, broccoli, onions, red pepper, cheeses and dry mustard powder.
  • Mix very well and pour into the prepared baking dish.
  • In a separate bowl, whisk together the milk, eggs, and Bisquick.
  • Pour over the top of the other ingredients and bake.

12 to 16 ounces broccoli florets (frozen or fresh)
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard
1/2 teaspoon salt
Dash of pepper
1 1/2 cups milk
3/4 cup cheddar cheese (shredded)
4 slices ham (cooked)
2 tablespoons butter (melted)
1/2 cup panko breadcrumbs
Optional: 1 tablespoon onion (finely minced)

Steps:

  • Preheat the oven to 375 F.
  • Butter a 1 1/2-quart casserole dish.
  • Place the broccoli in a saucepan. Add about 1 inch of water and bring to a boil over medium-high heat. Cover the pan and reduce the heat to low. Cook until just barely tender, or about 3 to 4 minutes.
  • Meanwhile, in a saucepan over medium heat, melt the 3 tablespoons of butter. Add the flour and cook, stirring, for 1 to 2 minutes. Add the dry mustard, salt, and pepper. Gradually add the milk and minced onion, if using. Continue to cook until thickened, stirring constantly.
  • Add the cheese to the sauce mixture and stir until it has melted. Remove the sauce from the heat.
  • Drain the broccoli and put it in the prepared casserole dish.
  • Add the ham to the casserole dish and then pour the sauce over the ham and broccoli mix.
  • Combine the 2 tablespoons of melted butter and panko breadcrumbs. Stir to coat the crumbs and then sprinkle over the casserole.
  • Bake the casserole in the preheated oven for 20 to 25 minutes.

1 (9 inch) pie crust
1 ½ cups fresh broccoli, chopped
4 large eggs
1 ⅓ cups whole milk
½ teaspoon kosher salt, or to taste
⅛ teaspoon ground nutmeg
freshly ground black pepper to taste
½ cup diced cooked ham
½ cup grated Gruyere cheese
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Lightly flour the bottom of a 9-inch pie or quiche pan and fit crust into the pan, all the way up to the edge. Lightly prick the bottom and sides of the pastry, 1 1/2 inches apart.
  • Cut parchment paper to fit the bottom of the pan, place parchment on the pastry, and put pie weights or dried beans on top of the parchment.
  • Bake on the center rack of the preheated oven for 10 minutes. Place pan on a wire rack, remove the weights and the paper, and allow to cool completely, about 30 minutes.
  • Meanwhile, fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add broccoli and cook uncovered until softened, about 5 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.

  • Break eggs into a large bowl and whisk until yolks and whites are combined. Add milk, salt, nutmeg, and pepper, whisking until well combined.

  • Set quiche on a baking sheet and place on the center rack of the oven. Bake until egg mixture is set, 45 to 50 minutes. 2 cup(s) baked ham, chopped
14 ounce(s) chopped frozen broccoli
1 medium onion, chopped
1 1/2 cup(s) extra sharp cheddar cheese, shredded.
1 cup(s) bisquick
3 cup(s) milk
4 - eggs, lightlybeaten
2 teaspoon(s) mrs. dash regular seasoning
2 tablespoon(s) olive oil

Steps:

  • Preheat oven to 350°
  • Steam chopped frozen broccoli till just fork tender. Cover the bottom of a prepared 9x13 baking dish with the broccoli.
  • While steaming the broccoli, add the olive oil to saute in frying pan over med-high heat. Soon as the oil begins to smoke, add the chopped onion and stir several times as it cooks. You want it to lose it's opaque coloring and be a little brown on the edges. Layer this over the broccoli.
  • Layer the chopped baked ham over the sauteed onion and then cover the onion with the shredded cheese.
  • In a mixing bowl add the Bisquick, beaten eggs, milk and Mrs. Dash seasoning. Mix together with a whisk til thoroughly blended. Pour over the top of all the layers in the casserole dish.
  • Bake for one hour and let set outside of oven for 10 minutes before serving.

1 tablespoon olive oil
