Steps:
- Position a rack about 8 inches from the broiler and preheat.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
- Stir the onions, ham, herbs and cheese into the eggs.
- Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
- Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
BROCCOLI-CHEDDAR FRITTATA
A frittata is an excellent way to sneak veggies into your family's diet, and in this recipe, the veggie is broccoli. Also, thawed, diced hash brown potatoes speed up the cook time and the prep time, too. If you want more color on top of the frittata, shorten the baking time by a couple of minutes, and use the broiler to achieve the color you want. For breakfast or brunch, fresh fruit or baby tomatoes make a great side.

- Gently pat the vegetables into an even layer with the back of a spatula or spoon and turn off the heat. Sprinkle cheese over the vegetables, followed by bacon.
- Pour the egg mixture into the skillet and gently shake to eliminate any holes around the vegetables. Let the residual heat cook the eggs slightly, about 2 minutes.
- Bake in the preheated oven for 8 to 10 minutes. Check for doneness by using a knife to cut the center slightly. Eggs should not be runny enough to fill the cut. Allow to cool in the skillet for 5 minutes before serving.

HAM AND EGG FRITTATA
Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.

Tips:
- Use a large skillet or griddle to cook the frittata so that it has plenty of room to spread out and cook evenly.
- Don't overcrowd the skillet with ingredients. If you add too much, the frittata will be thick and not cook through properly.
- Cook the frittata over medium heat so that it has time to cook through without burning.
- Don't flip the frittata until it is set on the bottom. Otherwise, it will fall apart.
- To check if the frittata is done, insert a toothpick into the center. If it comes out clean, the frittata is done.
- Let the frittata cool for a few minutes before slicing and serving.
Conclusion:
This ham, broccoli, and cheddar frittata is a delicious and easy-to-make breakfast, lunch, or dinner option. It's packed with protein, vegetables, and cheese, making it a nutritious and filling meal. The frittata is also very versatile, so you can easily customize it to your liking. Add your favorite vegetables, meat, or cheese, and you're sure to have a delicious meal that the whole family will enjoy.
