  • Preheat broiler. In a bowl, whisk eggs, pepper and salt. Stir in 1 cup cheese and ham., In a 10-in. ovenproof skillet, heat butter over medium-high heat. Add broccoli; cook and stir until tender. Reduce heat to low; pour in egg mixture. Cook, covered, 4-6 minutes or until nearly set. Sprinkle with remaining cheese., Broil 3-4 in. from heat 2-3 minutes or until eggs are completely set. 2 tablespoons unsalted butter
1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.

1 clove garlic, minced
1 tablespoon olive oil
4 large eggs
1 teaspoon fresh thyme leave, minced,or 1/4 teaspoon dried,crumbled
1 teaspoon fresh rosemary leaf, minced,or 1/4 teaspoon dried,crumbled
freshly ground black pepper
1/4 lb ham steak, chopped (about 3/4 cup)
1/3 cup grated extra-sharp cheddar cheese

  • In an 8- or 9-inch flameproof heavy skillet cook onions and garlic in oil over moderately low heat, stirring, until softened.
