HAM, BROCCOLI AND RICE CASSEROLE
I received a request for this recipe so I decided to post it. I've made this for years and have made a few adjustments in the ingredients to suit my family's tastes. It's still just a Ham and Broccoli casserole, but It's also a quick and easy dinner. I sometimes add waterchestnuts to give it a little crunch or sliced mushrooms. Feel free to add whatever you like and enjoy.

HAM, BROCCOLI & RICE SKILLET MEAL
Steps:
- In a large skillet, melt olive oil over medium heat and cook onion until tender, stirring frequently. Add rice from mix and cook for 2 minutes, stirring frequently. Add water and contents of seasoning packet from the rice mix; mix well. Bring to a boil, then reduce heat to low, cover the skillet, and cook for 10 minutes, stirring occasionally. Stir in broccoli and ham. Return mixture to a boil, then reduce heat again to low, cover, and cook 10-15 minutes until rice is tender, stirring frequently. Stir in Parmesan cheese and serve.
Tips:
- Choose the right rice: Long-grain rice, such as basmati or jasmine, is best for this recipe. It cooks quickly and doesn't get mushy.
- Don't overcrowd the pan: If you add too much rice or vegetables to the pan, they won't cook evenly. Cook the rice and vegetables in batches if necessary.
- Use a large skillet: A large skillet will give the rice and vegetables plenty of room to cook. If you use a small skillet, the rice will be more likely to clump together and the vegetables will be more likely to burn.
- Season the rice and vegetables: Don't forget to season the rice and vegetables with salt, pepper, and other spices. This will help to bring out their flavor.
- Cook the rice until it is tender: The rice should be cooked until it is tender but still has a slight bite to it. If you overcook the rice, it will become mushy.
- Add the cheese and ham at the end: The cheese and ham should be added to the rice and vegetables at the end of the cooking process. This will help to prevent them from overcooking.
Conclusion:
This ham broccoli rice skillet meal is a quick and easy weeknight dinner that is sure to please the whole family. It is made with simple ingredients that you probably already have on hand, and it can be on the table in less than 30 minutes. The rice is fluffy and flavorful, the vegetables are tender and crisp, and the ham and cheese add a delicious touch of protein and flavor.
