DILL PICKLE HAM PINWHEELS (HAM ROLLUPS)
Here's a quick, great party pleaser I've made for years which has a lot of variability. It's really simple and goes well with beer and soft drinks at neighborhood or family gatherings.

Steps:
- Pat dill pickle dry with paper towel.
- Take 2-3 pieces of meat (depending on size of pickle), and place them on a cutting board overlapping half of each with the next. (If you're lucky, you can find the ham cut in a rectangular shape as opposed to square. In this case, you can use just one slice and it will encase the entire pickle.).
- Spread cream cheese over meat.
- (You can use more cream cheese if you like.) Wrap pickle around in blanket fashion.
- Chill for an hour or two, then slice pickle in~1/2 inch pieces and lay flat on tray.
- (If using dried beef, you can also put meat in blender and pulverize. Spread cream cheese on dried pickle then roll in pulverized beef. Again, allow to refrigerate 1-2 hours and slice as above.).

Steps:
- In a large bowl, mix together cream cheese, sour cream and dry ranch dip mix.
- Beat until no lumps remain.
- Put a very thin layer of the cheese mixture on a tortilla, being sure not to go all the way to the edge.
- Place slices of ham on top (I always put one piece in the middle and then cut other pieces to fit around the edges), again being careful not to go all the way to the edge.
- Start tightly rolling the tortilla. Try to keep everything inside so the cheese mixture and ham don't come out.
- Roll up tightly in plastic wrap and place in the fridge or freezer.
- Repeat steps 3 through 7 until you run out of ingredients.
- When you're ready to serve, cut the long rolls into small, round pinwheels. I was able to get 8 good pinwheels per long roll (the endpieces are fine to nibble on but they don't make a pretty presentation). If you freeze the rolls for a little while rather than refrigerate them, it makes cutting easier and presentation nicer. I didn't freeze the ones in my picture, so they were messy and misshapen but still very yummy! ENJOY!

Tips:
- For best results, use fresh, thinly sliced ham. - Choose fillings that complement the flavor of the ham, such as cream cheese, spinach, and sun-dried tomatoes. - If you're using a spreadable cheese, like cream cheese, let it come to room temperature before using so it's easier to spread. - If you're using a hard cheese, like cheddar, grate it finely so it distributes evenly throughout the filling. - To make the pinwheels easier to roll, place the filling on the ham slices in a thin, even layer. - Roll the pinwheels tightly so they don't come apart when you slice them. - Chill the pinwheels for at least 30 minutes before serving so they have time to firm up. - Serve the pinwheels with your favorite dipping sauce, such as ranch dressing or honey mustard. Conclusion:
