cooked ham slices (enough to cover the bottom of a 13x9 casserole dish)
3 cups packaged dry cornbread stuffing mix
1 can cream of celery soup
1 can cream of mushroom soup
1 (4 1/2 ounce) jar sliced mushrooms, undrained
1 cup cooked corn, drained
1 medium onion, chopped fine
1/2 cup celery, chopped fine
8 ounces shredded cheese (I used a mixture of Colby and Monterey Jack)

Steps:

  • Spray skillet with cooking spray and add about 2 tbsp.
  • butter and saute onion and celery till almost tender.
  • In large bowl add the corn bread stuffing mix, the two cans of soup (undiluted), mushrooms with liquid, corn and the onion and celery mixture; mix thorougly.
  • Spray a 13x9 casserole dish with cooking spray and put enough ham to cover the bottom.
  • Sprinkle the cheese evenly over the ham.
  • Spoon the stuffing mixture over the ham and cheese spreading the mixture evenly.
  • Bake at 400 for approximately 30 minutes.

1 1/2 cups herb seasoned stuffing mix, crushed
1/3 cup Crisco shortening, melted
2 tablespoons water
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup milk
2 cups cubed low-sodium ham
1 cup canned peas
1/2 cup shredded American cheese (or your choosing)
1 (3 ounce) can chopped mushrooms
1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 425 degrees, In a bowl, combine the stuffing mix, melted shortening, and water; set aside 1/2 cup of the mixture for the topping.
  • Press remaining crumbs into a 9 inch pie plate. I use Pyrex. *Mixture will barely cover.

1 small bunch mustard greens, stemmed and chopped (about 8 cups)
1 pound tasso ham or ham steak, cut into ½-inch cubes
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage
3 cups low-sodium turkey or chicken broth
Kosher salt and freshly ground pepper
2 large eggs
8 cups 1/2-inch stale cornbread cubes (preferably not sweet; 12 ounces)
8 cups 1/2-inch stale country white bread cubes (12 ounces)

Steps:

  • Preheat the oven to 375 degrees F; butter a shallow 3-quart baking dish. Melt 6 tablespoons butter in a large pot or Dutch oven over medium-high heat. Add the onions and celery and cook, stirring occasionally, until softened, about 5 minutes. Add the mustard greens and cook, stirring, until wilted, about 3 minutes. Stir in the ham, thyme and sage.
