Time 1h

Yield 6 serving(s)

Number Of Ingredients 9

1 refrigerated pie crust, softened as directed on box (from 15-oz. box)
3 eggs
3/4 cup milk
2 tablespoons all-purpose flour
1/4 cup grated parmesan cheese
1 cup finely chopped cooked ham (about 6 oz.)
1 medium tomatoes, cut in half, seeded and cut into thin strips
3 tablespoons chopped green onions
1 cup shredded cheddar cheese (4 oz.)

Steps:

  • Heat oven to 400.
  • Place pie crust in 9-inch glass pie plate as directed on box for one-crust filled pie. Do not prick crust. Bake 8 to 10 minutes or just until edge begins to brown (if crust puffs up in center, gently push down with back of wooden spoon).
  • Meanwhile, in medium bowl, beat eggs, milk, flour and Parmesan cheese with wire whisk until well blended.
  • Layer ham, tomato, onions and Cheddar cheese in partially baked crust. Pour egg mixture over layers.
  • Cover crust edge with strips of foil to prevent excessive browning; bake 25 to 35 minutes or until golden brown and knife inserted in center comes out clean. Let stand 10 minutes before serving.

HAM AND SWISS CHEESE QUICHE

Ham and Swiss Cheese Quiche image

This quiche has been a family favorite for many years. Very tasty and fairly easy to make. It has a mild flavor and even my kids liked it (if they couldn't see the green pepper.) You can use left over ham or as I often do ham lunch meat. This does make a very full pie crust.

HAM-AND-SWISS QUICHE

Ham-and-Swiss Quiche image

A tender pie crust plus a savory filling add up to a delicious and classic ham-and-cheese quiche for brunch. The key to this gluten-free recipe is the easy-to-work-with dough. Since there's no gluten, which leads to toughness if the dough is overworked, you can mix and roll without worry.

Time 1h

Number Of Ingredients 10

1 large yellow onion, halved and thinly sliced
2 teaspoons olive oil
1 teaspoon fresh thyme leaves
Coarse salt and pepper
Gluten-free all-purpose flour, for rolling
1 recipe Gluten-Free Pie Dough
5 large eggs plus 2 large egg whites
1/3 cup whole milk
4 ounces ham steak, cut into small cubes (1 cup)
1/2 cup shredded Swiss (2 ounces)

Steps:

  • Preheat oven to 400 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss together onion, oil, and thyme and spread in a single layer; season with salt and pepper.
  • Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Transfer to a 9-inch pie plate, fold overhang under, and crimp edge. (If dough breaks or cracks, patch holes with extra dough.) Line with parchment and fill with dried beans or pie weights. Place onion on top rack and dough on bottom rack; bake until onion is soft and crust is dry at edge and light golden, 15 to 18 minutes. Remove parchment and beans.
  • In a medium bowl, whisk together eggs and egg whites, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir in onion, ham, and Swiss. Pour mixture into crust and bake on top rack until center is just set, about 25 minutes. Serve warm or at room temperature.

Tips

  • Use a good quality pastry dough: This will make all the difference in the final product. If you're short on time, you can use a store-bought dough, but if you have the time, making your own is definitely worth it.
  • Don't overcook the quiche: The quiche is done when the center is just set and a toothpick inserted into the center comes out clean. Overcooking will make the quiche dry and rubbery.
  • Let the quiche cool slightly before slicing: This will help to prevent the quiche from falling apart.
  • Serve the quiche warm or at room temperature: The quiche can be served immediately, or it can be refrigerated and served later. If you're refrigerating the quiche, let it come to room temperature for about 30 minutes before serving.

Conclusion

The ham, tomato, and Swiss quiche is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It's also a great way to use up leftover ham and vegetables. With its creamy filling and flaky crust, this quiche is sure to be a hit with everyone who tries it.
