1 carrot, chopped
6 sprigs fresh thyme
1 bay leaf
2 pounds chuck roast, cut into 2-inch cubes
Kosher salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil
1 medium onion, chopped
2 tablespoons cognac
5 tablespoons unsalted butter
1 pound mushrooms, sliced
3 cloves garlic, chopped
2 tablespoons sour cream, plus more for garnish
1 tablespoon Dijon mustard
2 tablespoons chopped fresh parsley leaves, plus more for garnish
1 (1-pound) package wide egg noodles

Steps:

  • Heat the beef stock with the carrot, 3 thyme sprigs, and bay leaf. Pat the beef dry and season it with salt and pepper. Heat 3 tablespoons oil in a large heavy bottomed skillet over high heat. Fry the meat in batches so that it is browned on all sides. Lower the heat to medium and return all the meat to the pot. Add the onions and cook until they are soft, about 5 minutes. 1 lb lean beef, cubed
2 beef bouillon cubes
4 tablespoons sour cream
1 1/2 cups hot water
3 tablespoons flour
6 tablespoons butter
8 ounces mushrooms, sliced
1/2 cup chopped onion
salt and pepper
1 lb wide egg noodles

Steps:

  • Cook beef slowly in butter.
  • Dissolve bouillon cubes in hot water to make broth.
  • Add flour to broth, whisk until smooth.
  • Add the following to the cooked beef:.
  • flour mixture, sour cream, onion and mushrooms.
  • Season to taste.
  • Keep warm on lowest setting in skillet, 20 minutes.
  • DO NOT SIMMER!
  • Serve over cooked egg noodles.

You can have this easy dish on the table in 15 minutes. I came up with it when trying to come up with fast dinners to make with little fuss. I can see from all of the similar recipes that the idea is not completely original, but this one does not contain any cream soup in it.

1 lb lean ground beef
8 ounces medium egg noodles
8 ounces fresh mushrooms, sliced
16 ounces light sour cream
1 medium onion, coarsely chopped
1 beef bouillon cube (or 1 t granulated)
1/8 teaspoon garlic powder
1/2 teaspoon salt
1 tablespoon Worcestershire sauce

Steps:

  • In large skillet, brown ground beef and onion together.
  • Meanwhile, prepare egg noodles according to package directions adding bouillon to water.
  • When beef is almost brown, add mushrooms, salt, garlic powder and Worcestershire sauce and mix well; cook until mushrooms are tender.
  • Turn off heat and stir in sour cream. Add drained egg noodles and stir well to completely coat.

We ate this at least once a week growing up. Served over extra broad egg noodles or farfalle (bowtie pasta). We mixed the sour cream to taste in our own plates rather than added it to the sauce. Great reheated as leftovers as well. Very quick, the sauce takes as much time as boiling the water and cooking the noodles. If you want, a packet of brown gravy mix can be used in place of the bouillon and half the flour. Watch it, that stuff is salty!

1 lb extra lean ground beef
1 (10 ounce) can mushroom stems and pieces, with liquid
3 teaspoons beef bouillon powder
2 cups hot water
2 tablespoons flour
1/2 cup cold water
1 tablespoon mushroom soy sauce or 1 tablespoon reduced sodium soy sauce
1 teaspoon garlic powder
1 tablespoon onion powder
black pepper
salt
1 cup sour cream

Steps:

  • Brown the ground beef in a hot pan, adding a bit of water to prevent sticking if necessary. I have used a saucepan, electric frypan, as well as a skillet so use what you like.
  • Add garlic and onion powder, stirring to coat and toast a bit.
  • Add black pepper to taste.
  • Add mushrooms with liquid.
  • Add bouillon powder and hot water, mixing well.
  • Bring to a boil, then turn down to a simmer. Allow to simmer to develop the flavour. Five minutes is good, ten minutes is even better.
  • Whisk the flour into the cold water to make a slurry. Stir into the simmering beef mixture making sure no lumps form.
  • Increase heat so that mixture bubbles. Allow to bubble until thickened, stirring frequently to prevent scorching.
  • Stir in the soy sauce, taste, and add salt only if needed. The soy sauce and bouillon are salty, so be careful. Diners can always add salt in their plate if needed, it is harder to take it out!
  • Serve over hot, cooked noodles with a dollop of sour cream for each person to mix in their plate.
  • If desired you can add 1/2 to 1 cup light sour cream directly to the sauce after removing it from the heat (rather than mixing it in your plate). However, we find it stores better without the sour cream.

Tips:

  • To save time, use pre-cooked hamburger patties or leftover roast beef.
  • For a creamier sauce, use sour cream instead of yogurt.
  • Add a splash of white wine or beef broth for extra flavor.
  • Serve over egg noodles, mashed potatoes, or rice.
  • Garnish with fresh parsley or chives.
