1 pound lean ground beef ((We used 93/7.))
½ cup white onion (finely chopped)
2 ¼ cups beef broth
½ cup white rice (uncooked (long grain, jasmine, or basmati))
¼ cup tomato paste
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon chili powder
½ teaspoon salt (or to taste)
¼ teaspoon cumin
¼ teaspoon oregano
¼ teaspoon pepper
1 ½ cups cheddar cheese (shredded)

Steps:

  • In a large skillet over medium heat, add the oil, ground beef, and onions. Cook the ground beef until no pinks remain. Drain excess grease, and return to the pan.
  • Stir in the broth, rice, tomato paste, onion powder, garlic powder, chili powder, salt, cumin, oregano, and pepper. Bring the ingredients to a boil, cover, and reduce the heat to simmer.
  • Continue to cook for 20 to 25 minutes or until the rice is tender and cooked to the desired consistency.
  • Remove from heat, uncover, and top with shredded cheese. Return the lid and all the residual heat to melt the cheese. Serve hot, and store leftovers in the refrigerator for up to 3 days.

1 lb. ground beef
1 small onion, diced (or about 1 cup of frozen pre-diced onion for a shortcut)
1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
1 (10.5 ounce) can condensed cream of celery soup, NOT diluted
1 ¼ cups milk
½ teaspoon salt
½ teaspoon dried chives
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups cooked rice ((I use 2 packages (8.8 oz each) of Uncle Ben's Ready Rice microwaved according to package instructions))
2 cups frozen mixed vegetables, thawed ((I use a 10-ounce package))
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal ((about 1 ¾ c. whole cereal before crushing))
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.
  • Add cooked rice, soup mixture and vegetables to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.
  • In a small bowl, toss together Corn Flakes crumbs and melted butter. Sprinkle over top of the casserole.
  • Bake, uncovered, at 350 degrees F for 30 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving.

1 pound lean ground beef
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 medium onion, finely diced
1 1/2 cups finely diced celery
1/4 teaspoon red pepper flakes (optional)
1 14.5-oz can beef broth
1 10.5-oz can cream of celery soup
1 cup long-grain white rice

Steps:

  • Add ground beef, salt, pepper and garlic to a large skillet then brown and crumble over medium-high heat. When beef is about half cooked, add onion, celery and red pepper flakes then continue cooking until beef is cooked through and veggies are starting to become translucent. Do not drain. Spray a medium-sized casserole dish (1.5 quart) with cooking spray or rub with butter. In a separate bowl, whisk together broth and soup until smooth. Pour soup mixture and rice into skillet and stir until all ingredients are thoroughly incorporated. Pour into prepared casserole dish, cover tightly with aluminum foil then bake at 350 degrees for 1 hour or until rice is tender. Remove casserole from oven and let rest, covered, for 15 minutes before serving. Garnish with chopped green onions if desired. Notes: You can use other creamed soup flavors such as cream of onion or cream of mushroom. Use uncooked rice. I don't know if this can be made with Minute rice or brown rice because I've never cooked either type of rice. This recipe doubles easily in a 3-qt 13x9 dish. Cook 15-30 minutes longer or until rice is tender. You must cover the dish TIGHTLY with foil to ensure the moisture stays inside to cook the rice through. I don't know how this could be converted to a slow cooker recipe.

½ cup uncooked long-grain white rice
1 pound ground beef
1 small onion, chopped
1 ½ teaspoons dried oregano

½ teaspoon white sugar
¼ teaspoon ground black pepper
1 (28 ounce) can whole tomatoes

  • In deep metal rectangular pan or 9x13 pan,cover the inside of pan with tinfoil, bottom and sides so there is enough lap over the sides to fold together in the middle to form a cover.
  • Remove core and chop cabbage.
  • Place in pan.
  • Sprinkle with 1 tsp salt.
  • In large mixing bowl, mix meat, 1 tsp salt, pepper, diced onions, 2 eggs, cilantro, rice, and brown sugar. Mix well.
  • Distribute evenly over the chopped cabbage.
  • Squeeze the lemon over the meat mixture.
  • In bowl mix soup water, tomatoes with juice and allspice.
  • Pour over the top. Take a fork and gently fork down in the layer of ingredients to make sure sauce goes down into the bottom to the cabbage. Do not rip tinfoil.You can refrigerate overnight but use more cooking time.
  • Remember to close the tin foil and make a fold in the top. This creates a steam pocket for the rice and vegetables to cook.
  • Bake 350°F 50 minutes or extra 10 minutes if refrigerated.
