3/4 lb lean ground beef
1 tablespoon extra virgin olive oil
1 onion, diced
1 garlic clove, finely chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon salt
1/4 teaspoon black pepper
1 dash ground cloves
3 cups roughly chopped cabbage
2 carrots, cut in half on the lenght, then sliced
2 celery ribs, sliced
3 cups reduced-sodium beef broth
3 cups water
1/4 cup tomato paste
2 bay leaves
1 cup cooked rice
lemon, quarters

Steps:

  • In a large saucepan, cook ground beef at medium-high heat, stirring from timet to time for about 5 minutes or until not pink. With a skimmer, took out the beef and put in a bowl. Set aside. Deglaze the saucepan and then wipe off the grease.
  • In the saucepan, heat oil at medium heat. Add onion, garlic, thyme, marjoram, salt, pepper and cloves. Cook, stirring, for about 5 minutes or until onion has soften. Add cabbage, carrots and celery. Cook, stirring, for 3 minutes. Add stock, water, tomato paste and bay leaves. Stir.
  • Put the beef back in the saucepan and bring to boil. Reduce heat, cover and let simmer for about 15 minutes (me it was near 25 minutes) or until cabbage is tender. Add cooked rice and reheat for about 2 minutes. Remove bay leaves. Serve the soup with lemon quarters.

1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
1 (10.5 ounce) can condensed cream of celery soup, NOT diluted
1 ¼ cups milk
½ teaspoon salt
½ teaspoon dried chives
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups cooked rice ((I use 2 packages (8.8 oz each) of Uncle Ben's Ready Rice microwaved according to package instructions))
2 cups frozen mixed vegetables, thawed ((I use a 10-ounce package))
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal ((about 1 ¾ c. whole cereal before crushing))
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.
  • Add cooked rice, soup mixture and vegetables to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.

1 cup onion (diced)
1 tablespoon minced garlic
7 cups vegetable broth
1- 28 ounces can crushed or diced tomatoes
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1 tablespoons Italian seasoning
1 teaspoon brown sugar (if you don't have a sweet ketchup)
3/4 cup uncooked white rice
salt and pepper as desired

Steps:

  • In a medium frying pan, brown the ground beef, onion and garlic until ground beef is no longer pink. Drain the grease (I also like to rinse it with hot water to remove most of the grease) and place in a large crockpot. Alternatively, you can fry these in the bottom of your InstantPot and drain the grease from it.
  • Add the broth, tomatoes, Worcestershire, ketchup,brown sugar (if wanted) and Italian seasoning. Add more sugar and Worcestershire to taste if needed. Place the lid on the crockpot and cook on low for 8-10 hours. Alternatively, you can cook this on the stovetop. Simply add the rice and simmer until the rice is cooked.
  • For the crockpot method, thirty minutes to an hour before serving, add in the rice and cook until tender.

1 1/2 lb ground sirloin
6 c beef broth
2 c carrots, sliced on the bias, 1/2 inch thick
1 c coarsely chopped, yellow onion
1/5 c celery, sliced on the bias, 1/2 inch thick
1/2 c green pepper, diced
1/2 c long-grain white rice
1 tsp table salt, or to taste
1 tsp freshly ground black pepper, or to taste.
2 medium bay leaves
1/4 c catsup
28 oz canned tomatoes with juice, i prefer hunts petite diced
8 oz tomato sauce
2 Tbsp tomato paste

Steps:

  • 1. Brown the ground sirloin over medium high heat, in a large pot that will hold all the other ingredients.
  • 2. Add the tomato paste, and stir until fragrant, about 3 to 4 minutes.
  • 3. Add the beef broth, catsup, canned tomatoes, and tomato sauce, and stir until the ingredients begin to simmer.
  • 4. Add the remaining ingredients and combine.
  • 5. Bring to a boil, and then reduce to a simmer.
  • 6. Continue to simmer, uncovered, for about one hour.
  • 7. Serve immeadiatly with such sides like crackers, crispy bread, some shredded cheese, and sliced hot peppers. And maybe a glass of white wine, in front of a nice fire.
  • 8. Keep the faith, and keep cooking.
