Steps:

¼ cup soy sauce
1 small carrot, cut into 1/4-inch dice

2 teaspoons sriracha sauce

1/4 cup panko bread crumbs
1/4 cup finely chopped onion
1 large egg, lightly beaten
2 serrano peppers, seeded and minced
1 garlic clove, minced
1/2 pound ground chicken
2 tablespoons peanut oil
SOUP:
6 cups chicken or vegetable stock
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1 small onion, cut into thin strips
1 cup bok choy leaves, cut into 1-inch strips
1 cup fresh baby carrots, julienned
1 cup julienned roasted sweet red peppers
3 serrano peppers, julienned
2 garlic cloves, minced

8 cups chicken stock
2 tablespoons coarsely chopped fresh ginger
3 garlic cloves, peeled
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
2 whole chicken breasts, bone in
1 lb bok choy, chopped
1/4 lb vietnamese rice noodles, 1/2-inch-wide (bahn pho)
3 tablespoons finely chopped scallions
4 ounces baby tatsoi
vietnamese hot sauce (tuong ot toi)

Steps:

  • In a medium stockpot, bring chicken stock to a simmer over medium heat. Add ginger, garlic, 1/4 cup each of the cilantro and mint leaves, and chicken. Simmer until chicken is cooked through, about 30 minutes.
