This is one of my mother's cake recipes for a birthday. I love this recipe and it tastes great.

1 cup butter, room temperature
2 cups white sugar
1 teaspoon vanilla extract
4 eggs, separated, room temperature
3 teaspoons baking powder
3 cups all-purpose flour
1 cup milk, room temperature
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan or three 8- or 9-inch round layer cake pans.
  • Cream the butter and sugar together until smooth and fluffy, about 5 minutes. Add the egg yolks one at a time, beating after each one. Mix in the vanilla extract.
  • Sift together the baking powder, flour, and salt. Add the flour mixture to the creamed mixture in three batches, alternating with the milk. Blend after each addition. Scrape down the sides and bottom of the bowl and beat an additional minute.
  • In a separate bowl, beat the egg whites with a dash of salt until stiff peaks form. Fold one third of the egg whites into the cake batter to lighten it; gently fold in the remaining egg whites. Pour batter into prepared pan(s).
  • Bake in preheated oven until cake springs back when touched lightly with a fingertip and a tester inserted in the center comes out clean. Cake layers may be done baking after 25 minutes; a 9x13-inch cake may take 35 minutes. Cool on wire rack.

2 1/2 cups sifted Cake Flour
3 teaspoons Baking Powder
1/2 teaspoon salt
1 1/2 cups sugar
1/2 cup butter (at room temperature)
3/4 cup milk
1 teaspoon vanilla
2 eggs
1/4 cup milk

Steps:

  • Sift flour with baking powder, salt, and sugar. Stir shortening just to soften. Add flour mixture, 3/4 cup milk, and the vanilla. Mix until all flour is moistened; then beat 2 minutes at medium speed of electric mixer or 300 vigorous strokes by hand, scraping bowl occasionally. Add eggs and remaining 1/4 cup milk; beat 1 minute longer in mixer or 150 strokes by hand. Pour batter into two 9-inch layer pans which have been lined on bottoms with waxpaper. Bake at 350° for 30-35 minutes, or until cake tester inserted into center comes out clean. Cool cakes in pans 10 minutes; then remove from pans and finish cooling on racks. Alternate Baking Pans: This cake may also be baked in three 8-inch layer pans at 350° for 25 to 30 minutes, or in a 1 3 x 9-inch pan for 30 to 35 minutes.
