AUTUMN HARVEST PUMPKIN PIE

Autumn Harvest Pumpkin Pie image

This is a very easy, very good pumpkin pie recipe (I'm not much of a baker and even I can handle this one!) It originally came to our family by way of a series of cookbooks published in the 1960's by high school home economics teachers: Mrs. Patsy Sachse Edmunds of Crete-Monee HS in Crete, Illinois gets the original credit for this.

PUMPKIN AND WALNUT PIE

Pumpkin and Walnut Pie image

Categories     dessert

Time 1h

Yield 6 servings

Number Of Ingredients 10

Pastry for a 1-crust, 10-inch pie (see recipe)
1 1/2 cups pumpkin, canned or fresh
3/4 cup sugar
1/2 teaspoon salt, optional
1 teaspoon grated fresh ginger or half that amount ground
1/4 teaspoon nutmeg
3 eggs
1 1/4 cups milk
3/4 cup heavy cream
3/4 cup toasted walnut pieces, preferably black walnuts

Steps:

  • Line 10-inch plate with pastry. Trim off excess around edge.
  • In mixing bowl, combine pumpkin, sugar, salt and spices.
  • Preheat oven to 425 degrees.
  • Add eggs, milk and cream to mixture. Blend well and stir in walnuts.
  • Pour mixture into pie plate and bake for 15 minutes. Reduce temperature to 350 degrees and bake 30 to 40 minutes longer or until set.

Tips:

  • Use fresh, ripe pumpkin. This will give your pie the best flavor. If you can't find fresh pumpkin, you can use canned pumpkin puree, but be sure to drain it well before using.
  • Don't overmix the dough. Overmixing will make the dough tough. Mix just until the ingredients are combined.
  • Chill the dough before rolling it out. This will make it easier to work with and prevent it from shrinking in the oven.
  • Blind-bake the pie crust before filling it. This will help to prevent the crust from becoming soggy.
  • Use a variety of spices in your pie filling. This will give it a more complex flavor. Some good spices to use include cinnamon, nutmeg, ginger, and cloves.
  • Don't overcook the pie. Overcooking will make the filling tough. Bake the pie until the center is set and a toothpick inserted into the center comes out clean.
  • Let the pie cool completely before serving. This will allow the flavors to develop and the pie to set properly.

Conclusion:

Harvest Walnut Pumpkin Pie is a delicious and festive fall dessert. It's perfect for Thanksgiving or any other special occasion. With its creamy, flavorful filling and flaky, buttery crust, this pie is sure to be a hit. So next time you're looking for a special dessert, give this recipe a try. You won't be disappointed!
