½ pound bacon
1 (2 pound) package frozen hash brown potatoes
2 (16 ounce) packages frozen O'Brien hash brown potatoes
8 cubes chicken bouillon
1 teaspoon celery seed
½ teaspoon ground black pepper
8 (10.75 ounce) cans cream of chicken soup, undiluted
2 quarts milk

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, reserving drippings in the skillet. Chop bacon into smaller pieces.
  • Combine hash brown potatoes, O'Brien hash brown potatoes, chicken bouillon, celery seed, and black pepper in a large pot over medium heat; bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, 20 to 30 minutes.
  • Puree potatoes with an immersion blender until smooth.
  • Pour reserved bacon drippings, cream of chicken soup, and milk into the pot. Simmer until heated through, about 10 minutes. Sprinkle chopped bacon on top.

1 package (30 ounces) frozen shredded hash brown potatoes
6 cups water
1/3 cup chopped onion
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
4 ounces process cheese (Velveeta), cubed
1 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine the potatoes, water and onion. Bring to a boil. Reduce heat; stir in soup and cheese. Cook and stir until cheese is melted. , Stir in the sour cream, salt and pepper. Cook and stir until heated through (do not boil).

I've always prepared potato soup the hard way and it took forever to make - but it was darn good when it was done. HOWEVER, I found this recipe on PINTEREST and it is delicious and so very easy! So, I'm tossing the old recipe and using this new one. I bet if you try it, you'll use it all the time, too!! :)

1 32 oz. bag of orida hash browns
1 32 oz. chicken broth
2 clove garlic, minced (or 1 tsp. garlic powder)
2 Tbsp onion flakes (or 1 tsp. onion powder)
1 tsp beef bouillon granuiles
2 c shredded super sharp cheese (not low fat)
1 1/2 c half and half or heavy whipping cream
3 Tbsp flour (level - not heaped)
bacon, cheese or sour cream for topping

Steps:

  • 1. Turn crockpot on high. Put your hash browns (southern style, not the shredded style) in first. Sprinkle garlic and onion powder and beef bouillon granules on top. Pour chicken broth on it. Stir. Pour cheese on top of it and DO NOT STIR! If you turn your crockpot on at noon, your soup will be ready to thicken at 5PM!
  • 2. After at least 5 hours of cooking on HIGH (that's counted as soon as you turn on your crockpot because it takes a little while to get hot), you'll need to thicken your soup. To do that...... Mix Half and Half with the flour and blend well - I use a shaker so it's really mixed good. Pour into your soup mixture and stir together easily - you don't want to smash all your cubes of potatoes. Take the "crock" out of the "pot" and salt and pepper to taste. I never have to salt it if I use bouillon. Be careful that it doesn't burn after you've added your cream mixture.
  • 3. When you're ready to serve, garnish with bacon, cheese and sour cream, if desired. I did not want to garnish it, but I did want the taste of bacon in this soup, so I used a teaspoon of TASTEFULLY SIMPLE's BACON BACON and it was heavenly.
  • 4. I serve with hot corn bread and sweet iced tea. Garlic bread would be nice, too. I'm not kidding here, this soup is to die for and SO easy!

4 can(s) cream of chicken soup
4 can(s) milk
6-8 slice bacon (fried crisp)
6-8 Tbsp bacon drippings
2 c cubed ham
4 chicken bouillon cubes
1/4 c dry onion
2 Tbsp dried celery flakes
2 Tbsp celery seed
1 stick butter
2 lb frozen hash browns
garlic salt to taste

Steps:

  • 1. Boil hash browns in salted water with bouillon cubes, pepper, celery seed and flakes and onions until tender. Use 4 cups water; most boils away.
  • 2. In another large (8 quart) pan, mix soup and milk; stir until smooth. Add cooked potatoes, bacon, bacon grease, ham, butter, and garlic salt. Heat on low temperature. Be sure to taste before adding garlic salt or put into potato water. If too much water remains in potatoes, drain some off.
