I had hashbrowns I needed to use and came up with this meal for dinner. We loved it! You can add some spices to it if you like. I added some poultry seasoning and cayenne to it. This was easy and delish!!

1 bag(s) hash brown potatoes

Steps:

  • 1. Bag of Hash browns Any Sausage you like sautéed with onions & a little poultry seasoning 6 Eggs 1 packet Country style White Gravy (prepared, as directed on package)
  • 2. Saute sausage until browned. Add onion and cook for a few mins. Add Hash browns add poultry seasoning or any spice u like (cayenne) Mix everything well and cook until the hash browns are cooked (and somewhat browned)
  • 3. In a bowl add 6 eggs and 1/2 cup of water (or milk) parsley, s+p to taste. Can also add a handful or parsley. Beat the eggs well and then a little at a time add the potato mixture stirring well so the eggs don't cook in the bowl.
  • 4. Put potato mixture in a sprayed 9x13 pan. Top with prepared White Gravy (directions are on package) I added some scallions to the gravy.
  • 5. Bake 375 for 45 mins and add some cheese for the top. Bake for another 15 mins or until cheese is melted and casserole is done. (Depending on how your oven temperature is)

1 cup diced sweet onion
½ cup diced red bell pepper
½ cup diced green bell pepper
2 cups shredded sharp Cheddar cheese, divided
10 eggs
2 tablespoons Dijon mustard
1 teaspoon hot sauce
1 cup half-and-half
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 (14 ounce) package Hillshire Farm® Smoked Sausage
1 teaspoon Chopped chives

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13x2-inch baking dish.
  • In a large bowl, combine the thawed hash browns, onion, and bell peppers. Reserve a 1/2 packed cup of cheese and mix the remaining 1 1/2 cups with the hash brown mixture. Transfer to the baking dish and smooth into an even layer.
  • In the same bowl, whisk together the eggs, Dijon, hot sauce, half-and-half, salt, and pepper. Pour the egg mixture over the hash brown mixture and gently press down with the back of a spoon to help hash browns absorb the egg.
  • Cut the rope sausage crosswise into 1/4-inch slices. Lay across the top of the hash browns and gently press into the mixture.
  • Bake for 45 minutes. Remove and top with reserved cheese. Increase temperature to 400 degrees F and finish baking just until eggs are set and top is slightly brown, about 7 to 10 minutes. Let rest 10 minutes. Sprinkle with chopped chives or parsley if desired, then serve.

3 Tbsp butter
1 small onion chopped
1 c diced bell pepper
6 c hash brown potatoes
1 lb sausage
2 1/4 c milk
8 large eggs
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
2 tsp dijon mustard
2 c grated cheddar cheese
1 c parmesan cheese
1 tsp garlic powder
3 c bread crumbs optional

Steps:

  • 1. Preheat the oven to 350 degrees F. Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray. Melt the butter in a large frying pan. Add the onion, bell pepper and sauté over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Sauté until soft, about 5 minutes. In a second frying pan, sauté the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan. In a large mixing bowl, combine the milk, eggs, salt, pepper, garlic, nutmeg and mustard, briskly to blend. To assemble, spread the onions, green pepper and hash browns evenly at the bottom of the greased dish..Add bread cubed if using. Distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar. Let sit in refrigerator overnight. Bake the next morning before breakfast. Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown. Be sure to save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar

  • This was taken from Southern Living Magazine to which I added the onions and peppers. I am not a sausage fan but did enjoy this. Hope you do too.
