This is another great recipe from the Chuy's restaurant chain. It is really wonderful. This makes about 2 quarts. I would guess that it will keep in the refrigerator for a couple of weeks, or more.

INSTANT POT® PORK AND HATCH GREEN CHILE STEW
This is a classic example of the robust flavors of Hatch green chile peppers that have been mellowed by the richness of pork, potatoes, and sweet corn. When serving, if too spicy, drizzle bowls with honey to cut the heat.

Steps:
- Heat your stock pot on medium high heat and add oil. Add your pork and cook for 10-15 minutes stirring occasionally until browned.
- Next, add in the onions and continue to brown the onions with the pork. Add your flour and stir to combine. (If too thick you can add a teaspoon of oil so that the roux is manageable).
- Once the flour has turned a light brown color (2 minutes), add half of the water and stir frequently to incorporate and avoid any lumps. Then, blend the chiles except for the reserved chiles into the blender and puree. Add in the green chilies, the chopped and the pureed chiles, the rest of your water, cumin, garlic salt, celery salt, and bouillon cubes.
- Stir well and allow the chile to come up to a boil. Drop your heat to medium low, cover and simmer for 45 minutes to an hour. Salt to taste just before serving allowing the chile to cook for an additional minute to let the salt dissolve.
- Enjoy!

HATCH GREEN CHILE MEXICAN BREAKFAST CASSEROLE RECIPE - (4/5)
Provided by kipscookbook
Number Of Ingredients 15
Steps:
- Roast the peppers by placing them on an open gas flame, turning them frequently with tongs until all sides are charred black, about 7 to 10 minutes. (Alternately, the peppers can be roasted under a broiler, or on top of a gas or charcoal grill.) Place the blackened peppers in a plastic or paper bag, and let rest until cool enough to handle, about 15 minutes. Peel the peppers, split in half lengthwise, and remove the seeds and the stems. Butter a 9 by 13-inch baking dish. Spread the chiles in a flat layer across the bottom of the dish. In a large skillet, cook the sausage over medium-high heat, stirring to break up the meat, until browned. Add the onions and bell peppers, and cook, stirring, for 4 minutes. Add the garlic and chili powder, and cook, stirring, for 1 minute. Remove from the heat. In a large bowl, whisk the eggs and half-and-half with the hot sauce, salt and black pepper. Spoon 1/3 of the sausage mixture over the chiles in the dish, top with 1/3 of the tortilla quarters, and 1/3 of the cheese mixture. Repeat layering, ending with a cheese layer. Pour the egg mixture over the ingredients. Let rest, covered, in the refrigerator for at least 6 hours, or overnight. Preheat the oven to 350 degrees F. Bake until bubbly and golden brown, and a knife inserted into the custard comes out clean, about 1 hour and 10 minutes to 1 hour and 15 minutes. Remove from the oven and let rest 10 minutes before serving. Optional: Serve with sour cream, picante sauce, cilantro, and flour or corn tortillas.
Tips:
- To roast Hatch green chiles, place them on a baking sheet and broil them for 5-7 minutes per side, or until they are blackened and blistered. Once roasted, remove the chiles from the oven and place them in a paper bag for 10 minutes. This will help to steam the chiles and make them easier to peel.
- When peeling Hatch green chiles, wear gloves to protect your hands from the capsaicin, which is the compound that gives chiles their heat.
- To remove the seeds from Hatch green chiles, cut them in half lengthwise and use a spoon to scrape out the seeds.
- Hatch green chiles can be used in a variety of dishes, including salsas, soups, stews, and chiles. They can also be roasted and added to salads or sandwiches.
- When storing Hatch green chiles, place them in a plastic bag in the refrigerator for up to 2 weeks. You can also freeze Hatch green chiles for up to 6 months.
Conclusion:
Hatch green chiles are a delicious and versatile ingredient that can be used in a variety of dishes. Their unique flavor and heat make them a popular choice for many people. Whether you are roasting them, grilling them, or adding them to a salsa, Hatch green chiles are sure to add a delicious touch to your next meal.
