Time 1h5m

Number Of Ingredients 7

1 pkg yellow cake mix
20 oz can crushed pineapple, drained & juice reserved
8 oz pkg cream cheese
3 oz pkg vanilla pudding
1 c cold milk
9 oz container cool whip
nuts & coconut

Steps:

  • 1. Prepare cake mix according to package directions, using the reserved pineapple juice and water for the liquid called for in the directions.
  • 2. Bake at 350° F. for about 35 minutes in a greased and floured 15 x 10 x 1 inch jelly roll (I used a 9-/12 x 13 pan).
  • 3. Cool in pan, set aside.
  • 4. In a large bowl blend together cream cheese, pudding mix and milk until smooth. Fold in drained pineapple and spread over top of cake.
  • 5. Cover with whipped topping and sprinkle with nuts and coconut. Refrigerate.

Tips:

  • Ensure Accurate Measurements: Use measuring cups and spoons to ensure precise ingredient quantities for a successful cake.
  • Creaming Butter and Sugar: Cream butter and sugar together until light and fluffy for a smooth and well-blended batter.
  • Gradual Addition of Ingredients: Gradually add eggs and dry ingredients to the batter, alternating between them, to prevent curdling.
  • Properly Fold in Egg Whites: Gently fold in whipped egg whites into the batter using a spatula, maintaining airiness and preventing deflation.
  • Use Room Temperature Ingredients: Bring ingredients like butter and eggs to room temperature before baking for even blending and a smooth batter.
  • Avoid Overmixing: Mix the batter only until combined to prevent gluten development and a tough cake.
  • Proper Oven Temperature: Preheat the oven to the correct temperature and bake the cake according to the recipe to ensure proper doneness.
  • Toothpick Test: Insert a toothpick into the center of the cake; if it comes out clean, the cake is done baking.
  • Cooling and Frosting: Let the cake cool completely before frosting to prevent the frosting from melting and to ensure a smooth and even application.
