3 tablespoons apple cider vinegar
1 ½ teaspoons kosher salt, divided
½ cup whole milk, plus more as needed
3 tablespoons sugar
1 cup mayonnaise, divided
¼ cup white onion, grated
1 cup carrot, grated
½ teaspoon freshly ground black pepper, plus more to taste
2 scallions, thinly sliced, for garnish

Steps:

  • Drain the macaroni and transfer to a large bowl. While the pasta is still hot, mix in the apple cider vinegar and set aside to cool for 10 minutes.
  • In a small bowl, mix together 1 teaspoon of salt, ½ cup (120 ml) of milk, the sugar, and ½ cup (120 G) of mayonnaise.

5 eggs
7 large potatoes, peeled and cubed
1 cup elbow macaroni
3 cups mayonnaise
1 tablespoon sherry vinegar
1 ½ teaspoons curry powder
1 teaspoon celery seed
salt and black pepper to taste
2 cups grated carrots
1 cup frozen green peas, cooked, drained
1 small sweet onion, finely chopped

Steps:

  • Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink; peel and chop the cooled eggs.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. 1 (8 ounce) package cream cheese
1 (3 1/2 ounce) package instant cheesecake pudding, unprepared
1 cup French vanilla flavored coffee creamer (liquid)
1 lb strawberry, hulled and sliced
4 mandarin oranges, peeled and sectioned
1 (20 ounce) can pineapple tidbits, drained
3 kiwi, peeled and cut into half moons
2 mangoes, cut into bite size chunks
1 banana, cut into coins
1/2 lemon, juice of

Steps:

  • In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up.
  • Add the dry pudding mix. Beat until well combined.
  • With the mixer on low, slowly add the creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese, repeat until all of the creamer has been added to the mixture. Whip until smooth.
  • In a large bowl, combine strawberries, oranges, pineapple, kiwi and mango.
  • Add the cheesecake mixture to the fruit. Gently fold cheesecake mixture into fruit.
  • In a small bowl combine the banana coins and the lemon juice. Toss until well coated, drain the excess lemon juice. Gently fold the banana into the cheesecake salad.
  • Chill until ready to serve or serve immediately.
  • NOTES:.
  • Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way.
  • If you have to substitute cream for the creamer, powdered sugar and vanilla would be the best swap. 1 cup heavy cream, 1/4 cup powdered sugar and 2 teaspoons vanilla extract.
  • To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!

1 cup mayonnaise (Best Foods or Hellmans)
1 -1 1/2 large onion (sweet kind is better)
2 carrots (shredded)
3 potatoes (small chunks)
4 -5 hard-boiled eggs
1 teaspoon celery seeds or 1 teaspoon celery salt
pepper
1 tablespoon soy sauce
1 cup frozen peas
1 ounce black olives, sliced (small can, not sure of oz.)

Steps:

  • Boil the noodles, potatoes, and eggs separately.
  • Drain when cooked through and cool.
  • In a large bowl, put noodles and cubed potatoes and add mayo to consistency you like.
  • Thinly slice the onion.
  • Shred the carrots and add both to bowl.
  • Slice hard boiled eggs and add to bowl.
  • You can use celery (thinly sliced) or the celery seed for a milder celery taste - add to mixture.
  • Add the soyu sauce and pepper to taste and mix well.
  • Add the peas and gently mix.
  • Put black olives on top.
  • You may need to add more mayo and/or soyu the next day - its always better the next day.
  • Enjoy and Aloha.

8 ounces bacon, cut into 1/2 inch pieces
3 cups sweet potatoes, cooked and chopped
2 cups pineapple chunks
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons fresh lime juice
1/2 teaspoon pepper
1/2 cup macadamia nuts, chopped
lettuce leaf, to line serving bowl

Steps:

  • Fry bacon in skillet until crisp; drain.
  • Crumble bacon.
  • Mix the bacon with sweet potatoes and pineapple in a large bowl.
  • Combine mayonnaise, Dijon mustard, lime juice and pepper in a small bowl; mix well.
  • Add to sweet potato mixture; mix gently.
  • Stir in nuts.
  • Spoon into lettuce lined serving bowl and serve.

1 cup long grain rice
2 cups vegetable stock
1/2 teaspoon turmeric powder
3/4 cup pineapple chunk
1/2 cup mango, chunks
1/4 cup walnuts, coarsely crushed
1/3 cup raisins
1/2 cup cucumber, chopped
1/2 stalk celery, chopped
4 tablespoons lemon juice
3 tablespoons honey
2 tablespoons pineapple juice
1 clove garlic
salt, crushed
pepper, crushed

Steps:

  • Wash rice thoroughly.
  • In a pan, bring stock and turmeric powder to a boil.
  • Add rice.
  • Simmer until rice is cooked.
  • Drain, rinse and spread rice on a tray to cool.
  • Whisk dressing ingredients together in a bowl.
  • Taste and adjust seasoning.
  • In a bowl, mix rice with pineapple, mango, walnuts, raisins, cucumber and celery.
