1 tablespoon vegetable oil
4 pounds stew beef, cut into 1-inch cubes
5 cloves garlic, minced
½ cup red wine
5 stalks celery, cut into 1/2-inch pieces
1 onion, cut into chunks
10 cups water
1 (6 ounce) can tomato paste
2 tablespoons salt, or to taste
2 tablespoons white sugar
3 bay leaves
1 teaspoon ground black pepper
4 carrots, cut into 1-inch pieces
3 potatoes, cut into 1-inch pieces, or to taste
¼ cup cornstarch
¼ cup water

Steps:

  • Heat oil in a pot over medium-high heat. Add beef; cook and stir until browned, about 10 minutes. Add garlic; cook until aromatic, 2 to 3 minutes. Add wine; cook until alcohol has cooked off, about 5 minutes. Add celery and onions; cook until tender, about 5 minutes.
  • Pour 10 cups water into the pot. Add tomato paste, salt, sugar, bay leaves, and pepper. Bring to a boil. Lower heat to medium-low. Cover and cook stew until beef is tender, about 1 hour.
  • Place carrots into the stew; cook until slightly tender, about 10 minutes. Add potatoes; cook until tender, 10 to 15 minutes.
  • Mix cornstarch and 1/4 cup water together in a bowl; add to the stew. Let simmer until thickened, about 3 minutes.

2 to 2 1/2 pounds beef stew meat
2 cubes beef bouillon
4 tablespoons curry powder
2 potatoes, cubed
1 onion, quartered
2 carrots, sliced
3 stalks celery, chopped
4 cups water
2 to 3 teaspoons salt
1/4 cup of flour
1/4 cup very cold water
1 teaspoon sesame or peanut oil

Steps:

  • In a pot over high heat, brown meat on all sides. Cover with water and add bouillon cubes. Cook curry powder in 1 teaspoons sesame or peanut oil to get rid of the raw taste and add it to the meat. Cook covered for 1 1/2 hours. Add vegetables and cook until potatoes and carrots are tender. After stew is cooked, mix flour, and cold water well, using wire whisk to remove all lumps, and stir it into stew. Cook, stirring constantly, until stew thickens. Serve over steamed rice. IN A SLOW-COOKER: Mix all ingredients together except flour in large crockpot. Cook on high 4 to 6 hours or on low for 8 to 10 hours. After stew is cooked, mix together flour and water as directed above, stir into stew, and cook on high heat, stirring constantly, for 5 or 10 minutes, or until thickened.

2 pounds ground beef
2 pounds fresh green beans, cut into 1 inch pieces
2 large Spanish onions, sliced
2 green bell peppers, chopped
2 large tomatoes, sliced
2 medium heads cabbage, quartered
soy sauce
1 cup white rice

Steps:

  • In a large stock pot, layer ground beef, green beans, onions, bell peppers, and tomatoes. Finish with a layer of cabbage, then evenly drizzle soy sauce over top. Cover and cook over medium for 1 hour, or until cabbage is tender and meat is well done. Reduce heat as needed to prevent burning.
  • Meanwhile, rinse rice in a fine mesh strainer under cold running water until no longer cloudy. Transfer to a medium saucepan and cover with 2 cups water. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, remove from heat and let stand for 10 minutes, or until all liquid has evaporated. Serve over rice.
