2 tablespoons packed brown sugar
1 ¼ cups all-purpose flour
1 tablespoon baking powder
1 ½ cups whole bran cereal
1 ½ cups vanilla soy milk
1 tablespoon olive oil
2 egg whites

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).

I found this on an other site I made a few changes to it as it wasn't quite right and I think this way is better. You can add more sugar if you like but I have just found out I am diabetic so I was trying to keep the sugar down I suppose you could add splenda to them but my apple sauce was made with sweet apples so I didn't need too much sugar.I use a silicone muffin mould and don't use paper cases.

50 g bran flakes (breakfast flakes)
160 g wholemeal flour or 160 g spelt
25 g soft brown sugar
1 teaspoon cinnamon
1 tablespoon baking powder
290 ml apples, sauce
25 g butter (melted)
1 teaspoon vanilla extract

Steps:

  • pre heat oven to 190c and oil a 12 cup muffin tin or use paper cups.
  • mix bran flakes, flour, sugar,cinnamon and baking powder, in a bowl.
  • Then add apple sauce, melted butter and vanilla and mix well and spoon into the muffin tin.
  • bake for 25/30 minutes or until ready.
  • cool on a wire rack and enjoy.

I've looked all over for inspiration! When my mother was in the hospital for by-pass surgery, I picked up a handout for heart healthy bran muffins. It became the basis for this recipe, but I've added a number of very healthy additions. Customize this as you wish: choose different nuts, add raisins, dates, dried apricots... make them your own!

1 cup oat bran
1/2 cup wheat germ
1/2 cup flax seed meal
1 cup whole wheat flour
1 tablespoon vital gluten
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup brown sugar
1/4 cup hemp seeds (aka hemp hearts)
2 tablespoons chia seeds
2 tablespoons buckwheat groats
1/2 cup pecans, chopped
1/2 cup dried cranberries
1/2 cup prune, chopped
1 cup milk
2 eggs, beaten
1 teaspoon vanilla
