Originally from our good family friend, "Uncle Gene", this family favorite has been modified to remove the processed sugars and also make it allergy friendly making it a great recipe choice for your healthy holidays!

Number Of Ingredients 5

1 pound fresh cranberries
1 apple, cored but with skin
¾ rind of one orange
2 naval oranges, peeled and cut into small pieces
¾ cup of maple syrup

Steps:

  • Put all ingredients in a food processor, adding the maple syrup ¼ cup at a time, and tasting for desired sweetness.
  • Pulse until blended.
  • Chill and serve cooled.

1 (12 ounce) package fresh cranberries
2 large oranges, peeled and seeded
2 apples, cored and chopped
½ cup chopped walnuts
2 tablespoons honey

Steps:

  • In a food processor, combine the cranberries and oranges. Coarsely chop until mixed; place in salad bowl.
  • Add apples to the food processor and coarsely chop. Combine apples with cranberry and orange mixture.
  • Add chopped nuts to fruit mixture, stir and sweeten to taste. Refrigerate and serve chilled.

I found this recipe while taking a cooking class. Full of mixed fruit, celery and nuts, it's a lively alternative to jellied cranberry sauce. When cranberries are in season, I buy extra and freeze them so I can make this salad year-round.

4 cups fresh or frozen cranberries
3-1/2 cups unsweetened pineapple juice
2 envelopes unflavored gelatin
1/2 cup cold water
2 cups sugar
1 can (20 ounces) unsweetened pineapple tidbits, drained
1 cup chopped pecans
1 cup green grapes, chopped
1/2 cup finely chopped celery
2 teaspoons grated orange zest

Steps:

  • In a large saucepan, combine the cranberries and pineapple juice. Cook over medium heat until berries pop, about 15 minutes. , Meanwhile, in a small bowl, sprinkle gelatin over cold water; let stand for 5 minutes. In a large bowl, combine the berry mixture, sugar and softened gelatin. Chill until partially set. , Fold in the pineapple, pecans, grapes, celery and orange zest. Pour into individual serving dishes. Chill until firm.
