REALLY LOW FAT, LOW CHOLESTEROL AND LOW SUGAR BANANA BREAD

Really Low Fat, Low Cholesterol and Low Sugar Banana Bread image

My dh has high cholesterol and I'm trying to lose a bit of weight, so I modified several different recipes and added some ingredients to make it lower in fat, cholesterol, calories and sugar.

Provided by Chef C.S.

Categories     Quick Breads

Time 1h5m

Yield 2 loaves, 24 serving(s)

Number Of Ingredients 12

2 cups bananas, very ripe
3/4 cup fat free sour cream
1/3 cup honey
1/3 cup sugar
2 tablespoons Smart Balance butter spread
1 1/2 teaspoons baking soda
1 teaspoon vanilla
1 1/2 teaspoons baking powder
2 tablespoons applesauce (no sugar added)
1 3/4 cups all-purpose flour
1 egg
1 cup walnuts, chopped

Steps:

  • Mash 4-6 bananas (depending on size) to make ~ 2Cups. I mash a bunch and freeze in baggies.
  • Add the rest of the ingredients and mix, being sure to mix the butter evenly.
  • Pour into 6 mini loaves or 2 regular size loaves. These will rise a bit so allow room.
  • Bake in 350 degree oven for 45-50 minutes for mini loaves or muffins, 50-60 minutes for regular size loaves.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your banana bread will be. If you don't have any ripe bananas on hand, you can ripen them quickly by placing them in a paper bag with an apple for a few days.
  • Mash the bananas thoroughly. This will help to ensure that your banana bread has a smooth and even texture. You can use a fork or a potato masher to mash the bananas.
  • Use a combination of whole wheat flour and all-purpose flour. This will give your banana bread a more hearty and nutritious texture. If you don't have any whole wheat flour on hand, you can use all-purpose flour instead, but your banana bread will be less nutritious.
  • Add a variety of spices to your banana bread batter. This will give your banana bread a more complex and flavorful taste. Some good spices to use include cinnamon, nutmeg, ginger, and cloves.
  • Bake your banana bread at a low temperature for a longer period of time. This will help to prevent your banana bread from becoming dry and crumbly. A good rule of thumb is to bake your banana bread at 350 degrees Fahrenheit for about 60 minutes.

Conclusion:

Banana bread is a delicious and nutritious snack or breakfast food. It's easy to make and can be customized to your liking. By following these tips, you can make a healthy and delicious banana bread that you'll love.
