4 large carrots
1/2 cup walnuts, chopped
1/2 cup raisins
2 teaspoons fresh ginger, grated
1/3 cup olive oil
1/4 cup honey
1 tablespoon lemon juice
3 teaspoons apple cider vinegar

  • Put Raisins in a bowl and add some water to just cover the raisins and put it in the microwave on high for 45 seconds to plump them.
  • Shred carrots into a bowl.
