Time 32m

Yield 15 egg rolls, 6-10 serving(s)

Number Of Ingredients 7

15 egg roll wraps
5 ounces chicken breasts
2 cups bagged coleslaw mix
1 teaspoon minced ginger
1 teaspoon minced garlic
3 teaspoons low sodium soy sauce
cooking spray

Steps:

  • In a food processor, combine chicken breast, garlic, ginger, and soy sauce. Process until the chicken is ground to the consistency of ground beef.
  • Spray a pan with cooking spray and brown the chicken. Add the cabbage and carrots and cook until it is translucent.
  • Put wrappers in front of you with one point facing you, put about 1 or 1 1/2 teaspoons of filling in the center. Fold in both sides and roll from bottom to top. Brush a little water on the far corner to make them stick.
  • Spray each roll with cooking spray and place on a baking sheet. Bake for 12 minutes, turning about half way through.

Tips:

  • Prep your veggies in advance: To save time during the cooking process, chop and slice your vegetables ahead of time. This will also help ensure that your egg rolls are evenly cooked.
  • Use a variety of vegetables: Don't be afraid to mix and match different types of vegetables in your egg rolls. This will add flavor and texture to your dish. Some popular choices include cabbage, carrots, onions, celery, and bean sprouts.
  • Don't overfill your egg rolls: It's important to not overfill your egg rolls, or they will be difficult to roll and seal. Aim for about 1/4 cup of filling per egg roll.
  • Use a neutral-flavored oil for frying: When frying your egg rolls, use a neutral-flavored oil, such as vegetable oil or canola oil. This will help prevent the oil from overpowering the flavor of your egg rolls.
  • Serve your egg rolls with a dipping sauce: Egg rolls are traditionally served with a dipping sauce, such as soy sauce, duck sauce, or sweet and sour sauce. This adds extra flavor and moisture to the egg rolls.

Conclusion:

Healthy egg rolls are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or snack. They are also a great way to get your daily dose of vegetables. By following the tips above, you can make healthy egg rolls that are crispy, flavorful, and satisfying. So next time you're looking for a healthy and delicious meal, give these egg roll recipes a try!
