I was wanting a comfort food without spending a lot of time preparing it, and this is what I came up with. Please feel free to change the amounts of spices and seasonings to suit your own tastes. If your potatoes are too large cut them into quarters. Submitted to "ZAAR" on October 17th,2207

Categories     One Dish Meal

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb new potato, washed and cut in half
1 medium sweet onion, sliced into medium thick rings
1 lb smoked sausage, cut into bite sized pieces
1/2 lb baby carrots or 2 large carrots, cut into medium bite size pieces
1 teaspoon salt
1/2-1 teaspoon pepper
3 teaspoons melted margarine
1 teaspoon garlic powder
1 1/2 teaspoons dried thyme

Steps:

  • Preheat oven to 400ºF and spray a 9x13-inch baking pan with cooking spray.
  • Combine all ingredients except smoked sausage in a large zipper type plastic bag, mixing well.
  • Place ingredients from bag into prepared pan, bake uncovered for 30 minutes.
  • Add sausage to vegetables mixing well (if desired at this point feel free to add more seasonings).
  • Bake for 20 minutes or until potatoes are tender and golden browned.

Tips:

  • Choose the right potatoes: For the best results, use russet or Yukon Gold potatoes. These varieties are firm enough to hold their shape when cooked, but they're also fluffy and flavorful.
  • Cut the potatoes evenly: Cutting the potatoes into even-sized pieces will help them cook evenly. If the pieces are too large, they'll take longer to cook and may not be as tender. If they're too small, they'll cook too quickly and may fall apart.
  • Season the potatoes: Before baking, be sure to season the potatoes with salt, pepper, and any other desired spices. This will help them develop flavor as they cook.
  • Use a high-quality sausage: The sausage is one of the main ingredients in this dish, so it's important to use a good quality sausage. Look for a sausage that is made with real meat and has a good flavor.
  • Brown the sausage: Before adding the sausage to the potato mixture, brown it in a skillet over medium heat. This will help to develop the flavor of the sausage and prevent it from becoming dry.
  • Add some vegetables: If you want to add some vegetables to this dish, you can add diced onions, peppers, or zucchini. Just be sure to cook them before adding them to the potato mixture.
  • Bake the casserole until golden brown: The casserole should be baked until the potatoes are tender and the top is golden brown. This will usually take about 45 minutes to an hour.

Conclusion:

This hearty potato and sausage bake is a delicious and satisfying dish that is perfect for a weeknight meal. It's easy to make and can be customized to your own preferences. So next time you're looking for a quick and easy dinner idea, give this potato and sausage bake a try.
