This is a tasty, low-fat soup. It's all vegetables, beans and rice so there's not a lot of calories, either. You can replace the soy sauce with low sodium soy sauce, if desired.

HEARTY PORK BEAN SOUP

Hearty Pork Bean Soup image

It's wonderful to come home to this pork bean soup dinner simmering away in a slow cooker, especially on a busy weeknight. This soup uses dried beans and is simple to throw together in the morning before work. When you get home, just add a few more ingredients, and in half an hour dinner is ready! Do not put the tomatoes in for the first 8 hours of cooking, or the beans will not become soft. -Colleen Delawder, Herndon, Virginia

PORK & VEGETABLE SOUP

Pork & Vegetable Soup image

This is one of my favorite soups. So hearty and flavorful! Wonderful on a cool fall evening!

Provided by Amy H.

Categories     Pork

Time 6h15m

Number Of Ingredients 12

2 lb pork meat, diced
6 medium diced potatoes
1 pkg frozen mixed vegetables
1 can(s) (15 oz.) diced tomatoes
1 small onion, diced
1 pkg frozen corn
2 c fresh shredded cabbage
5 c chicken broth
salt & pepper to taste
garlic powder to taste
2 bay leaves
canola oil for browning

Steps:

  • 1. Sprinkle pork with salt, pepper and garlic powder. Brown pork in oil, in a large skillet; drain off oil.
  • 2. Transfer pork to a 6-qt. slow cooker. Add the remaining ingredients except cabbage. Cover and cook on low for 6 hours or until meat is tender. Add cabbage in last hour of cooking. Discard bay leaves. Serve with biscuits or rolls.

Tips:

  • Use a variety of vegetables: This will give your soup a more complex flavor and texture. Good choices include carrots, celery, onions, potatoes, and leafy greens.
  • Don't be afraid to experiment with different spices and herbs: A little bit of cumin, chili powder, or oregano can really liven up a soup. You can also add a bay leaf or two for a more subtle flavor.
  • Cook the soup over low heat: This will help the flavors to develop and meld together. If you cook the soup over high heat, it will likely scorch and the vegetables will become mushy.
  • Season the soup to taste: Once the soup is finished cooking, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
  • Serve the soup with a variety of toppings: This could include croutons, shredded cheese, sour cream, or chopped fresh herbs. This will help to make the soup more filling and flavorful.

Conclusion:

Vegetable and pork soup is a delicious and easy-to-make meal that is perfect for a cold winter day. It is also a great way to use up leftover vegetables. With a few simple ingredients and a little bit of time, you can create a hearty and flavorful soup that the whole family will enjoy.
