3 tablespoons extra-virgin olive oil
1 onion, finely chopped
2 leeks, white part only, thinly sliced
4 cloves garlic, minced
1 pound cured ham (serrano or prosciutto), preferably in one piece
1/2 pound dried white beans
Salt
Freshly ground black pepper
1 cup thinly sliced green or white cabbage
1 cup fresh green beans, snapped into halves
1 cup frozen green peas

Steps:

  • In a medium (4- to 6-quart) soup pot over low heat, combine olive oil, onion, leeks and garlic. Saute until onion has softened, about 10 minutes. Add 9 cups of water, ham, white beans and salt and pepper to taste. Simmer, covered, until beans are tender, about 2 1/2 hours.
  • Add cabbage and green beans. Simmer, covered, for 20 minutes. Add green peas and continue to simmer for 5 minutes more. Remove and discard ham. Adjust seasonings, and serve.

3 ruby red grapefruit, plus 4 grapefruit slices
6 ounces vodka
Simple syrup, recipe follows
Sugar
1 cup water
1 cup sugar

Steps:

  • Juice the grapefruits and divide the juice among 4 glasses. Add 1 1/2 ounces of vodka to each glass. Add desired amount of simple syrup to sweeten the drink. Stir well.
  • Dip the grapefruit slices in sugar, to coat. Place 1 sugar dipped grapefruit slice on the rim of each glass.
  • Combine the water and sugar in a saucepan over medium heat. Bring the water just to a boil and boil until the sugar dissolves, but the mixture does not get any color. Remove from the heat and let cool. Store in the refrigerator for up to 1 month.

3 green onions, chopped
1 tablespoon parsley, chopped
2 tablespoons lemon juice
1/4 teaspoon pepper
6 whole trout (each about 8 oz.)
seasoning salt
6 slices bacon
1/2 cup Bisquick
2 tablespoons yellow cornmeal
lemon wedge

Steps:

  • Combine green onions, parsley, lemon juice, and pepper. Sprinkle trout cavities with salt, then spread each with onion mixture.
  • In a wide frying pan over medium heat, cook bacon until crisp. Remove bacon from pan and drain. Leave 2 or 3 Tblsp. of the drippings in the pan and reserve remaining drippings.
  • Combine baking mix and cornmeal on a piece of waxed paper. Coat trout on both sides with mixture. Arrange half the trout in pan. Cook, turning once, until fish is lightly browned and flakes readily when prodded in thickest portion with a fork. For a 1-inch thick fish (measured in thickest portion), allow 5 minutes per side. (Allow same ratio of thickness to time-1-inch: 10 minutes total- for fish of all thicknesses.).
  • Cook remaining fish in reserved drippings. Slip a bacon strip into cavity of each fish. Garnish with lemon wedges.
