1 teaspoon ground cinnamon
2 teaspoons ground cumin
1/4 teaspoon cayenne, or more, to taste
Kosher salt
1 1/2 pounds pork loin roast
4 tablespoons vegetable oil
1 sweet onion, roughly chopped
2 cloves garlic, smashed
2 tablespoons freshly grated ginger
1 bunch fresh cilantro leaves
1 lime, zested

1/4 cup plain bread crumbs
Kosher salt
1 1/2 tablespoons Dijon mustard

  • Meanwhile, make the herb crust: In a food processor, combine the onions, garlic, ginger, cilantro, and lime zest. In the same saute pan in which the pork was browned, add the olive oil and the onion mixture and cook until softened. Stir in the bread crumbs and cook another 1 to 2 minutes. Season with salt, to taste. Spread the mustard on top of the fatty layer of pork and then press the herb crust into it. Bake until the internal temperature reaches 160 degrees F on an instant-read thermometer, about 30 minutes. Remove to a cutting board and allow to rest, covered for 5 to 10 minutes. Tips

  • Choose the right cut of pork loin. A pork tenderloin is a long, thin cut of meat that is located on the underside of the pork loin. It is a very tender and flavorful cut of meat.
  • Prepare the herb crust. The herb crust is what gives this pork loin its delicious flavor. You can use any combination of herbs that you like, but some good choices include rosemary, thyme, sage, and oregano.
  • Sear the pork loin. Searing the pork loin helps to lock in the juices and give it a nice brown crust. You can sear the pork loin in a skillet over medium-high heat or on a grill.
  • Bake the pork loin. Once the pork loin has been seared, it is baked in the oven until it is cooked through. The cooking time will vary depending on the size of the pork loin.
  • Let the pork loin rest. Before slicing and serving the pork loin, let it rest for a few minutes. This will help the juices to redistribute throughout the meat.

Conclusion

Herb-crusted pork loin is a delicious and easy-to-make dish that is perfect for any occasion. The herb crust adds a ton of flavor to the pork loin, and the meat is so tender and juicy. This dish is sure to be a hit with your family and friends.
