Steps:
- Mix all ingredients on a large baking sheet with sides.
- Toss to coat potatoes evenly with oil and herbs.
- Turn potatoes so that cut side is down.
- Sprinkle with salt and freshly ground black pepper.
- Roast in a 375 degree oven for 30 minutes or until done.
- Serve with any oil/butter/herb mixture left in pan.
Tips:
- Choose the right potatoes: New potatoes are best for this recipe, as they have a thin skin that crisps up nicely in the oven. If you can't find new potatoes, you can use small red potatoes or Yukon Gold potatoes.
- Wash the potatoes thoroughly: Scrub the potatoes well under cold water to remove any dirt or debris.
- Cut the potatoes into uniform pieces: This will help them cook evenly.
- Toss the potatoes with oil and seasonings: This will help them crisp up and develop flavor.
- Roast the potatoes in a hot oven: A high oven temperature will help the potatoes get crispy on the outside and tender on the inside.
- Stir the potatoes halfway through cooking: This will help them cook evenly.
Conclusion:
Herb Roasted New Potatoes are a delicious and easy side dish that can be served with a variety of main courses. They're perfect for a weeknight dinner or a special occasion meal. With a few simple tips, you can make sure your potatoes turn out perfectly every time.
