BUTTERED FRIED PARSNIPS

Buttered Fried Parsnips image

Parsnips are one of the vegetables I think I ought to like; they are a locally grown vegetable, available all winter after all. But I never managed to be terribly enthusiastic about them until this recipe came along.

Categories     Vegetable

Time 55m

Yield 4 serving(s)

Number Of Ingredients 5

2 lbs parsnips
salt & pepper
4 tablespoons butter
1 tablespoon parsley, Chopped
1/8 teaspoon nutmeg

Steps:

  • Wash, trim and scrape the parsnips.
  • Cut into uniform pieces and boil in salted water, 25 to 30 minutes or until tender.
  • Drain well, and let dry.
  • Just before serving, heat the butter in a skillet and saute over moderate heat until light brown on all sides, letting the parsnips caramelize a little in their own sugar. It is best if you have a large enough pan that they can be cooked in a single layer.
  • Season with the nutmeg, salt and pepper and serve in a warm vegetable dish, garnished with parsley.

Tips for Making Herbed Buttered Parsnips:

  • Choose the Right Parsnips: Select firm, blemish-free parsnips that are about the same size for even cooking.
  • Prep the Parsnips Properly: Peel the parsnips and cut them into uniform pieces to ensure even cooking.
  • Season Generously: Don't be shy with the seasonings! The combination of herbs and butter will elevate the flavor of the parsnips.
  • Use Fresh Herbs: Fresh herbs provide the best flavor, but dried herbs can be used in a pinch.
  • Roast at a High Temperature: Roasting the parsnips at a high temperature helps to caramelize the sugars and create a delicious browned exterior.
  • Keep an Eye on the Parsnips: Parsnips can burn easily, so be sure to check on them regularly and adjust the roasting time if necessary.
  • Serve Immediately: Herbed buttered parsnips are best served hot out of the oven, garnished with additional herbs for an extra touch of flavor.

Conclusion:

Herbed buttered parsnips are a simple yet elegant side dish that is perfect for any occasion. With their sweet and savory flavor, they are sure to be a hit with everyone at the table. The combination of roasted parsnips, herbs, and butter creates a dish that is both flavorful and satisfying.
