MACARONI SALAD WITH LEMON AND HERBS

Macaroni Salad With Lemon and Herbs image

Consider this a macaroni salad for the 21st century: Like the original, it's a welcome accompaniment to picnic fare and pairs with virtually anything off the grill. But this version also happens to be bright, acidic and herbaceous. The traditional elements have been preserved - elbow macaroni, mayonnaise and a pinch of sugar are mandatory - but they've been bolstered by bright flavors: lemon zest, tangy capers and pickles, crunchy celery and tons of fresh herbs. It goes lighter on mayonnaise than the original, swapping in tangy buttermilk for a dressing that is more glossy than gloopy. It can be served straight from the fridge or at room temperature. A splash of water stirred in restores its silky sheen.

Tips:

  • Choose the right macaroni. Elbow macaroni is the classic choice for macaroni salad, but you can also use other shapes like shells, penne, or fusilli. Just make sure the pasta is cooked al dente so it retains its shape and doesn't get mushy.
  • Use fresh, high-quality ingredients. The better the ingredients you use, the better your macaroni salad will taste. Look for fresh vegetables that are crisp and colorful, and use a good quality mayonnaise.
  • Don't overcook the vegetables. You want the vegetables in your macaroni salad to be tender but still have a bit of crunch. Overcooking them will make them mushy and bland.
  • Add some protein. Shrimp, chicken, or ham are all great additions to macaroni salad. They add flavor and make the salad more filling.
  • Don't be afraid to experiment. There are many different ways to make macaroni salad. Feel free to add your own favorite ingredients or try different variations of the classic recipe.

Conclusion:

Macaroni salad is a classic summer side dish that is always a hit at potlucks and picnics. It's easy to make and can be customized to your own taste. With a few simple tips, you can make a macaroni salad that is sure to impress your friends and family.
