HERBED MUSHROOM SAUCE

Herbed Mushroom Sauce image

I have some recipes for sauces my girlfriend gave me about 25 years ago. They are delicious on chicken and they are so fast to make. I had asked her at the time for some sauces for chicken and she gave me a bunch of them. I haven't made them in a bit but I remember them being delicious. Just putting them here so I don't lose them. Great as a dipping or drizzled over or even basting ...your choice

4 tablespoons butter, divided
3 cloves garlic, minced, divided
16 ounces fresh mushrooms, sliced
2 tablespoons flour (or whole wheat flour)
1 teaspoon herbes de provence
1 1/2 cups milk
salt and pepper to taste

Add one clove of the garlic and saute for a minute until fragrant. Add the mushrooms and sauté for 5-10 minutes, until golden brown and softened. Set aside. Sauce: Add the remaining 2 tablespoons of butter to the pan and melt again over medium high heat. Add the garlic and saute for a minute until fragrant. Add the flour and herbes de provence. Stir fry for a minute to cook out the flour taste. Add the milk slowly, whisking to incorporate. Let the mixture simmer until thickened. Season with salt and pepper. Assemble: Toss the sauce, pasta, and mushrooms together. Add the olive oil and water as needed to keep the sauce from getting too thick. Stir in the parsley just before serving.

CREAMY HERBED PARMESAN PASTA SAUCE WITH BACON AND MUSHROOMS

Creamy Herbed Parmesan Pasta Sauce With Bacon and Mushrooms image

This was born one night when I was trying a new recipe, but didn't have all the right ingredients. It's bits and pieces of 2 recipes plus my own additions. Awesome with fresh mushrooms, but very good with canned as well. I used to always buy the Knorr Herb and Garlic Sauce packages to make this dish, but haven't been able to find them for the last couple of years. This is VERY close to the same flavour, if not an exact duplicate, so that's exciting for me! Depending on how saucy you like your pasta, this is enough for 2 main course servings and up to 6 side dish servings.

Time 25m

Yield 2-6 serving(s)

Number Of Ingredients 12

1/2 lb bacon, cut into pieces
1/4 cup chopped onion
1 cup canned mushroom stems and pieces, drained (or 1 cup chopped fresh mushrooms)
3 garlic cloves, minced
1 teaspoon basil
1 teaspoon tarragon
1/2 teaspoon oregano
1 -2 teaspoon flour
1 cup milk
1/4 cup grated parmesan cheese
salt
fresh cracked pepper

Steps:

  • Place bacon pieces in a large frying pan and fry until about halfway cooked. (or you can do this step in the microwave).

  • Add flour and seasonings and stir until you can't see the flour. Gradually add milk while stirring.
  • Simmer until thickened. (This probably won't take more than a minute or two, depending on what kind of pan you're using.) Add parmesan cheese and stir until cheese is melted.
