Steps:
- Fit a large saucepan with a steamer basket, and fill with 1 inch water; cover and bring to a boil. Add shrimp; cover and cook, tossing once, until opaque throughout, 30 seconds to 4 minutes (depending on size of shrimp). Immediately transfer to a colander, and run under cold water to stop cooking. Pat shrimp dry with paper towels, then finely chop.
- In a medium bowl, combine shrimp, sour cream, mayonnaise, scallions, parsley, and lemon zest and juice; season with salt and pepper. Refrigerate shrimp dip until chilled, at least 30 minutes (and up to 2 days). Serve shrimp dip garnished with scallions, if desired, alongside crostini, crackers, or crudites.

GARLIC & HERB ROASTED SHRIMP
Steps:
- Preheat the oven to 400 degrees.
- Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
- Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

Tips and Tricks for Crafting Herbed Shrimp Dip Excellence:
- Selecting the Freshest Shrimp: Opt for wild-caught shrimp whenever possible, as they offer a superior flavor compared to their farmed counterparts. Look for shrimp with a firm texture, translucent appearance, and no off-putting odors.
- Dicing or Pulses: When it comes to shrimp preparation, you have two options: finely dicing the shrimp by hand or giving them a few quick pulses in a food processor. Dicing provides a more distinct shrimp texture, while pulsing creates a smoother consistency.
- Herbaceous Harmony: Experiment with various herbs to create a unique flavor profile. Classic choices include parsley, dill, chives, and tarragon. For a zesty kick, consider adding some cilantro or basil.
- Creamy Base Symphony: The choice of dairy plays a crucial role in determining the dip's richness and texture. For a lusciously creamy dip, opt for full-fat sour cream or Greek yogurt. If you prefer a lighter version, non-fat or low-fat dairy options will suffice.
- Cheese Indulgence: Enhance the dip's flavor and texture by incorporating your favorite cheeses. Cream cheese adds a smooth and tangy base, while Parmesan or cheddar provides a sharp and nutty flavor. For a touch of smokiness, try using smoked Gouda.
- Seasoning Symphony: Don't be shy with the seasonings! Garlic powder, onion powder, paprika, and cayenne pepper are all excellent choices for adding depth of flavor. A dash of lemon juice or white wine vinegar can brighten up the dip and balance out the richness.
- Chilling for Perfection: After assembling the dip, allow it to chill in the refrigerator for at least an hour. This step allows the flavors to meld together and develop, resulting in a more cohesive and satisfying dip.
Conclusion:
With its creamy texture, burst of shrimpy flavor, and herbaceous freshness, this Herbed Shrimp Dip is sure to be the star of any gathering. Whether you're hosting a casual get-together or a sophisticated party, this versatile dip is guaranteed to impress.
