3 sprigs fresh tarragon, plus 1 tablespoon chopped
3 sprigs fresh thyme
1 bay leaf
1 small onion, chopped
2 medium carrots, sliced
1 stalk celery, sliced
3 long strips lemon zest
4 bone-in chicken breast halves, skin removed (2 1/2 to 3 pounds)
4 cups chicken broth, low-sodium canned or homemade
1 bunch medium asparagus, thick ends trimmed, cut into 1-inch segments

Tips:

  • Use fresh vegetables. Fresh vegetables will give your soup the best flavor and texture. If you can, buy your vegetables from a farmers market or local grocery store.
  • Don't be afraid to experiment with different vegetables. There are many different vegetables that you can use in vegetable soup, so feel free to experiment until you find a combination that you like.
  • Add some herbs and spices to your soup. Herbs and spices can help to enhance the flavor of your soup. Some good options include basil, thyme, rosemary, garlic, and pepper.
  • Don't overcook your vegetables. Overcooked vegetables will become mushy and lose their flavor. Cook your vegetables until they are tender-crisp.
  • Serve your soup with a side of bread or crackers. This will help to soak up the broth and make your meal more satisfying.

Conclusion:

Vegetable soup is a delicious and healthy meal that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give vegetable soup a try.
