Yield Makes 24 tea sandwiches

Number Of Ingredients 7

1/3 cup mayonnaise
1/2 cup minced fresh parsley leaves
2 tablespoons minced fresh tarragon leaves
fresh lemon juice to taste
Tabasco to taste
12 very thin slices of homemade-type white bread
1 Vidalia onion (available seasonally at specialty produce markets and some supermarkets), sliced very thin

Steps:

  • In a small bowl stir together the mayonnaise, 1/4 cup of the parsley, the tarragon, the lemon juice, the Tabasco, and salt and pepper to taste. Spread one side of the bread slices with the mayonnaise, arrange the onion slices evenly on half the bread slices, and top them with the remaining bread slices. Press the sandwiches together gently, trim the crusts, and cut the sandwiches into quarters. Put the remaining 1/4 cup parsley in a shallow bowl and dip the edges of the sandwich quarters in the parsley.

Tips:

  • Choose the right bread. A sturdy bread that can hold up to the fillings is best. Options include white bread, wheat bread, or sourdough.
  • Use fresh ingredients. The fresher the ingredients, the better the sandwiches will taste. This is especially true for the onions, tomatoes, and cucumbers.
  • Don't skimp on the herbs. The herbs are what give these sandwiches their unique flavor. Use a generous amount of fresh parsley, dill, and chives.
  • Make the tea sandwiches ahead of time. These sandwiches can be made up to 24 hours in advance. Simply wrap them tightly in plastic wrap and refrigerate. When you're ready to serve, let them come to room temperature for 30 minutes.

Conclusion:

Herbed Vidalia onion tea sandwiches are a delicious and refreshing summertime treat. They are perfect for parties, picnics, or luncheons. With just a few simple ingredients, you can create a sandwich that is both flavorful and satisfying. So next time you're looking for a light and easy meal, give these tea sandwiches a try.
