I was a novice at break making when a neighbor gave me this recipe 15 years ago. Now bread making is one of my favorite things to do. This recipe won a blue ribbon at the Clackamas County Fair in 1993.

Yield 4 loaves (16 slices each).

Number Of Ingredients 11

2 packages (1/4 ounce each) active dry yeast
4-1/2 cups warm water (110° to 115°), divided
3/4 cup vegetable oil
3/4 cup sugar
1/4 cup molasses
2 teaspoons salt
1/4 cup toasted wheat germ
1/4 cup oat bran
2 cups quick-cooking oats
3 cups whole wheat flour
7 to 7-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add oil, sugar, molasses, salt, wheat germ, bran and remaining warm water; mix well. Add oats, whole wheat flour and 2 cups all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down and shape into four loaves. Place in a greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 minutes. Bake at 350° for 30-35 minutes. Remove from pans and cool on wire racks.

1 cup white flour
1/4 cup wheat germ
1/4 cup wheat bran (or oat bran)
1 teaspoon salt
1/2 cup raisins
1 1/2 teaspoons baking soda
1 3/4 cups buttermilk
1 3/4 cups molasses
1/2 cup brown sugar, firmly packed

Steps:

  • Preheat oven tro 350*F. Mix the flours, wheat germ, bran, salt, and raisins in a large bowl, set aside.
  • In a medium bowl, stir together baking soda and 1/4 cup of the buttermilk. Stir in the remaining buttermilk, molasses, and brown sugar. Add the liquids to the dry ingredients, stirring until just combined; do no overmix! Spoon into a lightly greased 9"x5"x3" loaf pan.
  • Bake for 1 1/4 hours or until a toothpick inserted in the center of the bread comes out clean. Loosen the loaf and turn out onto a wire rack; let cool completely. Cut in thin slices and serve with cream cheese or butter. This bread goes great with baked beans. Enjoy!

1 1/2 cups Miller wheat bran or wheat germ (available at natural foods stores and some supermarkets)
2 1/2 cups whole-wheat flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1/4 cup firmly packed dark brown sugar
2 cups buttermilk
1/2 cup unsulfured molasses
1/2 cup raisins if desired

Steps:

  • In a bowl combine the bran, the flour, the salt, the baking soda, and the brown sugar. In another bowl stir together the buttermilk and the molasses, stir the mixture into the flour mixture until the batter is combined well, and stir in the raisins. Spoon the batter into a lightly greased loaf pan, 8 by 4 by 3 inches, and bake it in the middle of a preheated 350°F. oven for 1 hour to 1 hour and 10 minutes, or until the bread sounds hollow when tapped. 3 cups all purpose flour
1 1/2 cups shredded bran cereal (such as All-Bran)
2 teaspoons baking soda
1 1/2 teaspoons salt

1/2 teaspoon baking powder
4 eggs
3 cups sugar
