2 teaspoons vanilla extract
1 stick butter
1/2 cup shortening, such as Crisco
4 cups powdered sugar

1/4 cup whole milk
1 1/2 teaspoons vanilla extract

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees. Thoroughly spray 18 muffin cups with baking spray.
  • To make the cake batter, combine the flour, granulated sugar and salt. Set aside.
  • In a separate container, combine the buttermilk, baking soda, vanilla and eggs. Stir to combine and set aside.
  • In a saucepan, melt the butter over medium heat. Add the cocoa powder and stir to combine. Add the boiling water, allow to bubble for a few seconds and then turn off the heat.
  • Pour the chocolate mixture over the flour mixture. Stir a few times to cool the chocolate. Pour the buttermilk mixture over the top and stir to combine.

Time 40m

Yield 6 cupcakes

Number Of Ingredients 7

3/4 cup confectioners' sugar
6 prepared cupcakes in black cupcake liners, unfrosted
3/4 cup white frosting
3 tablespoons desiccated coconut
12 red licorice candies with a white center, about 1-inch long
6 mini marshmallows, halved
6 chocolate licorice, halved

Steps:

  • Mix together the powdered sugar and 1 1/2 tablespoons water in a small bowl until thick and smooth. Pour the icing into a piping bag fitted with a small round tip. Pipe 3 parallel horizontal lines an inch apart around the cupcake liners. Pipe vertical lines an inch apart from each other to create a brick pattern (this will be the "chimney"). Let set completely on a serving platter.
  • Transfer the white frosting to a pipping bag fitted with a medium round tip and pipe onto the top of each cupcake. Dust with desiccated coconut.
  • Skewer the red licorice candies with a toothpick, leaving 1/2 inch of the toothpick exposed on one end. On the exposed end, skewer a halved marshmallow, then a halved chocolate licorice to make the legs. Repeat with the remaining marshmallows and chocolate licorice. Place 2 legs onto each cupcake.

Tips:

  • Use a large bowl. The batter will rise a lot, so you need a bowl that is big enough to accommodate it.
  • Don't overmix the batter. Overmixing will make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven. This will help the cake rise evenly.
  • Don't open the oven door during baking. This will cause the cake to fall.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.

Conclusion:

Ho Ho Bumpy Cake is a delicious and easy-to-make cake that is perfect for any occasion. With its moist chocolate cake and creamy vanilla frosting, it's sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give Ho Ho Bumpy Cake a try!
