The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!

2 teaspoons red wine vinegar
1 tablespoon dried oregano
1 tablespoon olive oil
4 hoagie rolls
1/4 lb prosciutto di Parma, thinly sliced
1/4 lb capicola, thinly sliced
1/4 lb genoa salami or 1/4 lb soprassata salami, thinly sliced
1/4 lb provolone cheese
1 large tomatoes, thinly sliced
1 small onion, thinly sliced
1/8 cup shredded lettuce

Steps:

  • Slice the rolls, but not all the way through.
  • Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.
  • Remove some of the bread from the center of each half of roll.(if desired)
  • Drizzle a little of the olive oil mixture on the bread.
  • Place first the meats, then the cheese in layers.
  • Top with the tomatoes, onions, then the lettuce. Drizzle with more of the dressing, as desired.

2 3/4 ounces blended canola/olive oil, 60/40 ratio
10 ounces sliced thin sweet onions in 1/16-inch slices
28 ounces sliced thin rib-eye steak in 1/16-inch slices
2 ounces melted sweet butter
1/4 teaspoon salt
Provolone cheese
Optional ingredients: homemade tomato sauce, bell peppers, mushrooms, or your favorite cheese

Steps:

  • For the hoagies:
  • Preheat frying pan over medium-high heat. Cut the hoagie rolls horizontally to open up and make a pocket. Add the blended oil to the pan and stir in the onions. Put the steak on top of onions and add 1/2-ounce of the butter. Cover the pan for 2 1/2 minutes. The meat should have a cooked appearance on top and rare underneath. Using a fork and spatula separate steak from the onions. When the meat is cooked add the salt, remaining butter, and provolone. Cover to the pan to melt the cheese. Divide the steak mixture among the hoagie rolls and serve. If you like, you can add the optional ingredients to the steak mixture before serving.

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Add the remaining warm water and sugar. Beat in the oil, salt and 4 cups flour until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes., Punch dough down. Turn onto a lightly floured surface; divide into 18 pieces. Shape each into an oval. Place 2 in. apart on greased baking sheets. With a scissors, cut a 1/4-in.-deep slash across the top of each. I made these for dinner last night and my husband LOVED them! In fact, my 22-month old daughter loved them, too! You can actually make a bunch of the chicken breasts ahead of time and freeze them. When ready to eat, just add the tomato sauce and mozzarella cheese and you're golden! Quick, easy, yummy chicken parm sandwiches. Perfect for Superbowl Sunday or any other time you need a great hoagy sandwich! We really liked these. Hope you do, too. :D Oh yeah, the chicken breasts I use are sliced to make them thinner and easier to cook evenly. If you have thicker breasts, you'll need to cook these longer in the oven. ENJOY!

4 boneless skinless chicken breast halves
1 egg, beaten
1/2 cup breadcrumbs
1/4 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon garlic powder

1/8 teaspoon fresh ground pepper
1 cup tomato sauce (I use Authentic Italian Tomato Sauce)
3/4 cup shredded mozzarella cheese
4 hoagie rolls
canned jalapeno (optional)
olive oil (for frying)

Steps:

  • Add the breadcrumbs, Parmesan cheese, oregano, paprika, garlic powder, salt and pepper to a Ziplock bag and shake to mix well.
  • Pour into a low flat bowl or onto some waxed paper.
  • Drop each chicken breast into the beaten egg and dredge in the breadcrumb, Parmesan cheese and herb mixture.
  • Heat a few tablespoons of olive oil over medium high heat in a pan.
  • Add the breaded chicken breasts, two at a time so as not to over-crowd the pan.
  • Cook on medium high heat for about 3 minutes per side.
  • Remove breasts to a paper towel-lined plate and fry the other two chicken breasts.
  • Place the cooked chicken breasts on a baking dish and cover each breast with 1/4 cup tomato sauce.
  • Sprinkle shredded mozzarella cheese over each one.
  • Place in a 400-degree oven for 8 to 10 minutes or long enough to melt the cheese and get the tomato sauce nice and hot.
  • I add the hoagie rolls to the oven when there is about 5 minutes left to get them nice and toasty and crusty.
  • Slice the hoagie rolls, add the chicken Parmesan breast and top with sliced jalapenos, if desired.
  • YUM!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with cooking spray.
  • Cover bottom of baking dish with 1 package crescent roll dough. Layer with salami, ham, and pepperoni. Cover meat with a layer of Provolone cheese and Swiss cheese. 8 tablespoons (1 stick) unsalted butter
1 rotisserie chicken, skin discarded and meat shredded
1 rotisserie chicken, skin discarded and meat shredded
One 2-foot Italian bread loaf, sliced in half lengthwise
1 stalk celery, thinly sliced
1 small head iceberg lettuce, shredded
Blue Cheese Ranch, recipe follows
1 cup crumbled blue cheese
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced chives
1 tablespoon vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and freshly ground black pepper

Steps:

  • Put the hot sauce and butter in a small skillet and heat until melted and combined. Let cool slightly, then pour over the shredded chicken in a medium bowl and toss to coat completely.
  • To assemble the sandwich, spread the chicken in an even layer on the bottom half of the bread. Top with the sliced celery and an ample amount of shredded lettuce. Spread the Blue Cheese Ranch on the top half of the bread and close the sandwich, using toothpicks to secure it. Cut into pieces and serve.

2 lbs hot sausage (or mild of you prefer)
2 onions, sliced
2 red peppers, sliced
2 tablespoons olive oil
hoagie roll

Steps:

  • Bring sausage to boil in a pan of water. Simmer for 10 to 15 minutes and drain and brown sausage for 5 to 10 minutes, as desired.
  • At the same time, in another pan, brown onions and peppers in olive oil over high heat.
  • Combine and serve with mustard and relish on hoagie buns! Enjoy!

1/4 lb ham, i use cappicola
1/4 lb salami, i use genoa
1/4 lb pepperoni
1/4 lb American cheese
1/4 lb provolone cheese
2 medium tomatoes
1 onion, finely chopped
1/2 head iceberg lettuce, shredded
1/2 cup Italian dressing
1/4 cup mayonnaise

Steps:

  • Chop ham, salami, pepperoni, american cheese, provolone cheese and place in a large bowl.
  • Chop tomatoes and onions and add to meat/cheese mixture.
  • Add shredded lettuce and toss well.
  • In a separate bowl mix italian dressing and mayonnaise.
  • Add to meat/cheese/tomato/lettuce mixture and toss until blended.
  • Serve with French or Italian bread.

1/4 cup thinly sliced red onion, separated into rings
1 (14 ounce) can artichoke hearts, rinsed and coarsely chopped
1 medium tomatoes, seeded and diced
2 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
1 teaspoon dried oregano
1 inch 16-to 20-inch-long baguette, preferably whole-grain
2 slices provolone cheese, halved (about 2 ounces)
2 cups shredded romaine lettuce
1/4 cup sliced pepperoncini pepper (optional)

Steps:

  • Place onion rings in a small bowl and add cold water to cover. Set aside while you prepare the remaining ingredients.
  • Combine artichoke hearts, tomato, vinegar, oil and oregano in a medium bowl. Cut baguette into 4 equal lengths. Split each piece horizontally and pull out about half of the soft bread from each side. Drain the onions and pat dry.
  • To assemble sandwiches, divide provolone among the bottom pieces of baguette. Spread on the artichoke mixture and top with the onion, lettuce and pepperoncini, if using. Cover with the baguette tops. Serve immediately.
