2 small onions, chopped
8 scallions, chopped
2 green peppers, chopped
1 lb mushroom, sliced
2 cups cooked rice
1/2 cup grated parmesan cheese
1 cup crouton
4 eggs, lightly beaten
1 cup milk
1/8 teaspoon dill
1/8 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 sharp cheddar cheese, grated
3 tablespoons grated parmesan cheese
1 some 1/2 lemon, juice of

Steps:

  • Saute onions, scallions, peppers, and mushrooms in vegetable oil.
  • Mix with rice, ½ c Parmesan cheese, croutons, and lemon juice. Spread mixture in 9 x 13 inch baking pan. Mix eggs, milk and seasonings and pour over vegetables.
  • Bake at 350 degrees for 45 minute Top with ½ lb grated cheddar cheese and 3 tblsp grated Parmesan cheese.

2 refrigerated pie crusts, unbaked
3 Tbsp olive oil
1 1/2 lb button mushrooms, sliced
2 c finely chopped onion
1/3 c all purpose flour
1/2 c stout beer
2 eggs, beaten
1 1/2 c grated cheddar cheese, sharp
1 c cottage cheese, small curd
1/4 c fresh parsley, chopped
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Line a 9-inch deep dish pie pan with one crust.
  • 3. Heat oil in large frying pan and saute mushrooms until they start to soften. Add onions and cook over medium heat until onions are translucent.
  • 4. Remove from heat and add flour and beer, mixing well.
  • 5. Add remaining ingredients and season with salt and pepper.
  • 6. Pour in bottom crust and top with second crust. Crimp edges to seal and cut two slits in top to vent.
  • 7. Bake 40-45 minutes, or until crust is golden brown. Let cool a few minutes and slice.
