CAMPFIRE HOBO DINNER

Campfire Hobo Dinner image

In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

HOBO BEEF AND VEGETABLE SOUP

Hobo Beef and Vegetable Soup image

My grandma called this soup Hobo Soup. She said it was something they made way back when, out of whatever they had available in their garden and shelves. It is a large dish (they were a family of 10), so have a big pot or slow cooker! I have halved it and honed it a little since most of us use a grocery now and don't have 8 kids.

HOBO STEW

Hobo Stew image

My dad use to make this dish when I was growing up and I just loved it. Of course his was a little different from mine but just as good. He would refer to it as Rainbow Stew also. Every time I make it I am reminded of him and remember all the times watching him cook growing up. It is called Hobo Stew because you can add anything you can get your hands on to it and it tastes great. It is very pantry friendly since you can pretty much use what you have vegetable wise (or what you like.) You can also add different meats. I have made it with ground longhorn, turkey, and deer. I have also used chunks of meat rather than ground. It is a great way to used up meat you have stashed in the freezer but can't think of what to cook with it (or just not enough of it the meat for it to stand-alone.) Tonight I actually used some cubed steaks I had in the freezer. I just chopped them up. If you use actual chunks of meat I would cut them into 1-inch chunks, brown in the oil before adding the vegetables. You can also play around with the herbs, adding combos you like or fresh herbs you have on hand. I just happened to have some fresh greek oregano my mother-in-law gave me . Just have fun and play around with it. The recipe is very versatile and makes a large pot of food. It is budget friendly too since you can use what is on sale.

Time 1h

Yield 10-12 serving(s)

Number Of Ingredients 19

1/4 cup olive oil
1 onion, diced
4 carrots, diced
2 stalks celery, diced
1 lb ground beef
2 tablespoons tomato paste
4 garlic cloves, minced
1/4 cup flour
2 (14 ounce) cans diced tomatoes, with their juices
2 (14 ounce) cans vegetable broth
4 cups beef broth
2 tablespoons Worcestershire sauce
2 bay leaves
4 large russet potatoes, peeled and cut into 1-inch chunks (roughly 2 pounds)
2 (14 ounce) cans green beans, drained
2 (14 ounce) cans black-eyed peas, drained
2 (14 ounce) cans hominy, drained
1/4 cup fresh oregano, minced (or 1 tablespoon dried)
salt and pepper

Steps:

  • Heat oil in a large pot over medium-high heat. Add in the onion, carrots, and celery. Cook until the onion is translucent.
  • Add the meat and cook until no longer pink. Toss in the tomato paste and cook for roughly two minutes. The color of the paste will deepen. Put in the garlic and cook 30 seconds, until garlic is fragrant.
  • Add the flour and stir to coat the meat and vegetables. Allow to cook for 2 or 3 minutes to cook out the raw flour taste.
  • Stir in the tomatoes with their juices. Add both kinds of broth, Worcestershire sauce, bay leaves, and then carefully place your potatoes inches Stir in the rest of the vegetables (green beans, hominy, and black-eyes peas.).
  • Bring to a boil, then cover, reduce heat and simmer hard (or low boil) until the potatoes are done (you will be able to easily slide a fork in.) It could take up to an hour depending on how small you cut the potatoes. Stir occasionally.
  • When potatoes are done remove the bay leaves, stir in the oregano, and salt and pepper to taste.

CHASEN'S HOBO STEAK

Chasen's Hobo Steak image

I recently watched a documentary about the closing of the great Hollywood restaurant Chasen's. During the film they kept showing the captains making this steak tableside and it looked just wonderful. At the end of the film they showed the recipes. I know the recipe looks like it has a lot of fat and it does but keep in mind the pieces of fat and the salt crust are disgarded and the steak is just cooked in the butter, you are not eating all that fat salt and butter. I think this would make a great special occasion meal.

HOBO DINNER

This version of hobo dinner is one my mom and dad made when we were growing up. It uses smoked dinner sausage slices (Hillshire Farms, etc.) instead of ground beef or other meats. Everyone loves it. Keeps well in the refrigerator for 2-3 days, and is delicious reheated. Not sure if it can be frozen for later....

I love making this when there is a large family gathering. Instead of many pots & pans it only takes 2. Possibly 3 if you want to smother it in peppered cream gravy! You can make this in a large skillet but I prefer a griddle, easier to turn when it's time. As far as meats or vegetables go its made with what you like & the amount is up to you! Tips:

  • Use sturdy bread: A hearty bread, like sourdough or French bread, will hold up better to the heat and moisture of the campfire.
  • Don't overload your hobo packet: Too much food will make it difficult to cook evenly and may cause the packet to break open.
  • Cook over a low fire: A high fire will burn the outside of the packet before the inside is cooked through.
  • Be patient: Hobo packets take longer to cook than food cooked over an open flame. Allow at least 30 minutes for the packet to cook through.

Conclusion:

Hobo packets are a delicious and easy way to cook over a campfire. They're perfect for camping trips, picnics, or any other outdoor gathering. With a little planning and preparation, you can create a hobo packet that's sure to impress your friends and family. So next time you're looking for a fun and unique way to cook your food, give hobo packets a try!
