ASIAN BBQ TURKEY DRUMSTICKS

Asian BBQ Turkey Drumsticks image

Provided by Food Network Kitchen

Time 6h15m

Number Of Ingredients 14

2 tablespoons five-spice powder
Kosher salt and freshly ground pepper
1/2 teaspoon granulated garlic
1/2 teaspoon onion powder
4 turkey drumsticks, without thighs (about 4 pounds)
3/4 cup wood chips, soaked
6 cloves garlic, chopped (about 2 tablespoons)
1 1/2-inches fresh ginger, peeled and finely chopped
3/4 cup rice vinegar
1/4 cup soy sauce
1 tablespoon dark sesame oil
2 tablespoons hoisin sauce
4 teaspoons Asian chili sauce, such as Sriracha
4 scallions (white and green parts), thinly sliced

Steps:

  • For the rub: Mix the five-spice powder, 1 teaspoon salt, 1/2 teaspoon pepper, granulated garlic, and onion powder together in a bowl. Smear the spices all over the drumsticks. Cover and refrigerate for several hours or overnight.
  • Prepare an outdoor grill with a medium-hot fire on one side of the grill for both direct and indirect cooking. Position a drip pan under the grate on the cool side. Toss 1/2 cup soaked wood chips onto the coals.
  • Lay the turkey legs on the grate over the drip pan. Cover the grill and position the lid's vent holes directly over the meat. When the fire dies down, after 45 minutes or so, add about a 1/2 dozen pieces of cold charcoal and the remaining wood chips to maintain a medium to medium-low smoky fire.
  • Meanwhile, make the mop: Whisk together the garlic, ginger, vinegar, soy sauce, sesame oil, hoisin, chili sauce, and scallions.
  • Set aside about half the sauce for serving. After about 1 hour, mop the turkey drumsticks with some of the mop and flip. Mop and flip every 10 minutes or so until the legs are browned and glazed and an instant-read thermometer inserted into the thickest part of the thigh registers about 170 degrees F, 30 to 40 minutes more. Serve the drumsticks with the reserved mop on the side.

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.
  • Cook the Onion: Pulse onion in food processor until finely chopped (or do by hand). Heat 1 tablespoon olive oil in a large skillet over medium-high, add onion, garlic, ginger and 1 teaspoon kosher salt; cook, stirring occasionally, until onion has softened, about 5 minutes. Stir in soy sauce, sesame oil, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.

In a large bowl, combine vegetable mixture with ground turkey, egg, 1/2 cup breadcrumbs, cilantro, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined.
  • Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with glaze, sprinkle with sesame seeds. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. Yield Serves 8

Number Of Ingredients 17

Cooking spray
1 1/4 cups whole wheat panko breadcrumbs
1/2 cup whole milk
3 large eggs
1/2 cup minced fresh parsley leaves or cilantro
1/4 cup minced fresh basil leaves
4 scallions, minced
6 garlic cloves, finely minced
1/2 medium white onion, grated on a box grater
1 tablespoon finely grated fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons kosher salt
Freshly cracked black pepper
1 pound ground pork
1 pound ground turkey
1/3 cup hoisin sauce
2 tablespoons ketchup

Steps:

  • Preheat the oven to 350°F. Line a broiler pan rack or wire rack with foil and set it on top of a rimmed baking sheet. Lightly coat the foil with cooking spray, then use a sharp knife to make a few slits in the foil (this will allow the fat from the meatloaf to drip down onto the baking sheet).
  • In a large bowl, whisk together the panko, milk, eggs, parsley, basil, scallions, garlic, onion, ginger, sesame oil, salt, and pepper to taste. Add the ground pork and turkey and stir or use your hands to gently combine, being careful not to overwork the meat.
  • Shape the meat mixture into a 12-inch long loaf and place it on the foil-lined rack. Flatten the top slightly and square off the ends. In a small bowl, whisk together the hoisin sauce and ketchup. Pour about half the sauce over the meatloaf and use a brush or spoon to generously coat the sides and top.
  • Bake for 1 hour to 1 hour 10 minutes, until the internal temperature reads 160°F on an instant-read thermometer, brushing with glaze every 20 minutes or so. Let the meatloaf cool for 10 to 15 minutes, then transfer to a platter, slice, and serve.
  • Variation
  • For an extra decadent loaf, melt 1 tablespoon unsalted butter in a large skillet over medium-high heat. Add the panko and toast until golden brown, stirring often, 2 to 3 minutes. Continue with the rest of the recipe.

Tips:

  • For the best flavor, use fresh turkey medallions. If you can't find turkey medallions, you can also use boneless, skinless turkey breast cut into 1-inch thick slices.
  • Make sure the turkey medallions are evenly browned before adding the hoisin sauce. This will help the sauce caramelize and create a delicious glaze.
  • If you don't have hoisin sauce, you can make your own by combining soy sauce, rice vinegar, brown sugar, and garlic powder.
  • Serve the hoisin-glazed turkey medallions with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.

Conclusion:

Hoisin-glazed turkey medallions are a delicious and easy-to-make dish that is perfect for any occasion. The hoisin sauce gives the turkey a sweet and savory flavor that is sure to please everyone. So next time you're looking for a new way to cook turkey, give this recipe a try. You won't be disappointed!
