I think this recipe came from MightyCool.com, but I'm not sure. My Mom who's 92 just loves it. I've changed the recipe a bit to suit our taste.

1 cup red apple, cored and diced
1 cup green apple, cored and diced
1 cup pineapple chunk (if canned then drain)
1/2 cup celery, diced
1/2 cup carrot, grated
1/3 cup raisins
1/3 cup dried cranberries
1/3 cup dried apricot, chopped in to smaller pieces
1 cup yogurt (non fat, low fat or regular) or 1 cup mayonnaise (non fat, low fat or regular)
1/2 cup dry white wine (I use the pineapple juice from the canned pineapple)
1 tablespoon fresh mint leaves, chopped (1 tsp dried)
1 cup pecans, chopped
1 cup cheddar cheese, grated

Steps:

  • Place the fruits, vegetables and dried fruit in a.

  • Mix together the mayonnaise, wine, and mint leaves.
  • Pour over the vegetables and toss lightly.
  • Add the pecans and cheese, lightly toss.

1 (3 ounce) box lime Jell-O gelatin
1 cup boiling water
2/3 cup cold water (or reserve pineapple juice and use in place of water)
1 cup whipping cream
4 ounces cream cheese, room temperature
1 (15 1/4 ounce) can crushed pineapple, drained (approximately 1 cup pineapple)
1 cup red seedless grapes, halved (or more to taste)
3/4 cup mini marshmallows (optional)

Steps:

  • In medium bowl, combine lime gelatin and boiling water. Stir in cold water or pineapple juice. Chill slightly in refrigerator but don't allow to completely set.
  • Remove from refrigerator. Whip jello until fluffy like egg whites.
  • In separate bowl, whip cream to soft peak stage; add cream cheese and whip. Add to jello, mix well.
  • Stir in crushed pineapple, grapes, and marshmallows. Chill until set.

1 can(s) fruit cocktail, in syrup
1 can(s) pears
1 can(s) cling peaches
1 large red delicious apple
1 c chopped pecans
1 can(s) bakers coconut
1 bottle small marachino cherries
1 large naval orange
1 large banana optional
1 can(s) crushed pineapple

Steps:

  • 1. Drain syrup from canned fruits and set aside. Chop apple into medium dice and coat with lemon juice to stop browning. Optional: Slice banana if using. Supreme the orange and cut slices into thirds. Drain juice from cherries and set aside. Half cherries. Mix all ingredients together. Add about a 1/4 cup cherrie juice.
  • 2. If adding banana, coat with lemon juice to keep from browning. Refridgerate before serving. Serve with Cool Whip or Whipped cream.

1 or 2 box instant strawberry gellatin
1 can(s) fruit cocktail, in syrup
1/2 c coconut
1 lb seedless grapes, halved
1/2 c walnuts
1 c marshmallows, mini
1 large tub whipped topping

Steps:

  • 1. Mix gelatin according to directions and set aside. Set whipped topping out to soften. Drain fruit cocktail.
  • 2. In large mixing bowl mix all other ingredients. Slowly pour cooled gelatin over and gently stir. Fold in topping and GENTLY stir until uniformly pink.
  • 3. Set in refrigerator overnight.
  • 4. All Mother's cooking was "add a bit, take out a bit". You can leave out coconut or marshmallows, trade pecans for walnuts, etc. Just be sure you GUARD your fridge, because once it's tasted, you just may have a stampede on your hands!

3 pkg ( 3 ounces each) strawberry flavored jello
3 c boiling water
2 ripe, bananas
1 pkg ( 16 ounces) frozen strawberries
1 can(s) ( 20 ounces) crushed pineapple in juice
1 pkg ( 8 ounce) cream cheese, softened
1 c sour cream or plain yogurt
1/4 c sugar

Steps:

  • 1. Gather ingredients and 9 x 13 pan.
  • 2. In a large bowl, dissolve gelatin in boiling water into gelatin mixture. Slice bananas into gelatin mixture. Add frozen strawberries and undrained pineapple.
  • 3. Pour half the mixture into 13 x 9 inch pan. Refrigerate 1 hour or until firm.
  • 4. In a mixer bowl, beat cream cheese with sour cream and sugar; spread over chilled layer, Gently spoon remaining gelatin mixture on top. Refrigerate until firm, about 2 hours. Cut into squares; serve on lettuce lined salad plates. Garnish with additional pineapple, if desired.
  • 5. Enjoy!
