GREEN JELLO SALAD
This is a refreshing jello salad that is a staple of our family get togethers. This is a recipe from my Grandmother. We now joke about making this jello months in advance (don't do it!!), because my Grandmother brought it for a family dinner and said she had made it weeks before - we could not eat it, but did not have the heart to tell her. It was the beginning signs of Alzheimer's :( for her. I hope she is not spinning in her grave since I am sharing this recipe. We miss her and think of her when we have this jello for Thanksgiving and Christmas.

LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

This is a variation on the traditional cranberry/pineapple salad; red and green layers with a cream cheese layer in between. My mom makes this at Christmas and/or Thanksgiving and I can't stop eating it. Would be good for potlucks, too. Yum!

Tips:
- Use fresh, high-quality ingredients: Fresh fruits and vegetables will give your salad the best flavor and texture. Make sure your gelatin is also fresh and has not expired.
- Don't overcook the vegetables: Overcooked vegetables will be mushy and lose their flavor. Cook them until they are just tender-crisp.
- Use a variety of textures: A combination of soft and crunchy textures will make your salad more interesting to eat. Try using a combination of fruits, vegetables, nuts, and seeds.
- Add a little acidity: A little bit of acidity will help to balance out the sweetness of the fruits and vegetables. You can add a squeeze of lemon juice, a splash of vinegar, or a dollop of yogurt.
- Don't overmix the salad: Overmixing will break down the vegetables and make the salad mushy. Gently toss the salad just until the ingredients are combined.
Conclusion:
Holiday Green Gelatin Salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its vibrant green color and festive presentation, this salad is sure to be a hit at your next holiday gathering.
