2 1/2 pounds sweet potatoes
1 tablespoon light margarine
1/3 cup evaporated skimmed milk
1/4 cup sugar
1 teaspoon vanilla extract
Marshmallow Creme Sauce
4 tablespoons light margarine
1/4 cup all-purpose flour
3/4 cup light brown sugar
1/2 cup water
1 cup miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F. Place the sweet potatoes in a large pot. Add enough water to cover the sweet potatoes and bring to a boil over medium-high heat. Reduce the heat to medium and cook until the sweet potatoes are tender when pierced with a fork. Drain the water and let the potatoes cool enough until they can be handled. Peel the potatoes and place in a mixing bowl. Add the margarine, evaporated milk, sugar, and vanilla extract. Beat with a mixer on low speed until smooth. Spoon the mixture into a 2-quart casserole dish. In a small saucepan, melt the margarine for the creme sauce over medium heat. When melted, whisk in the flour and cook, stirring constantly, for 1 minute. Add the brown sugar and water and mix well until the brown sugar dissolves. These Sweet Potatoes are my Granny's recipe, Clara Walker. What makes them extra special? You run your sweet potatoes through a food mill or fine colander and the potatoes are smooth with no lumps or strings. With the addition of some sugar, butter and vanilla these potato's really are the bomb ! The potato's are so smooth and creamy, almost like pie filling. And I haven't even got to the Marshmallow Cream part ! *This is not my picture but until I make them again this will have to do.

3 cup(s) sweet potatoes, cooked
1 cup(s) white sugar
1/2 cup(s) melted butter
3 - eggs, large
1/3 cup(s) milk
1 1/2 teaspoon(s) vanilla extract
1 jar(s) marshmallow cream or regular mini-marshmallows

Steps:

  • Preheat oven to 350 degrees
  • Grease an 8x8 baking dish
  • Run the 3 cups of cooked sweet potatoes through a ricer, food mill or fine mesh sieve or colander.
  • Stir in the rest of the ingredients by hand.
  • Pour into baking dish.
  • Top with Marshmallow cream or mini marshmallow. * The marshmallow cream will come out of the jar easier if you microwave it for just a couple of seconds. NO longer or you will have a marshmallow volcano ! lol
  • Bake until puffy. Serve immediately
  • I always double this recipe so we will have leftovers for the next day. You can make this up the night before and then just pop it in the oven with foil to warm and THEN add the marshmallow.

2 pounds sweet potatoes, peeled and cut into 1-inch pieces
½ cup reduced-sodium chicken broth
¼ cup whipping cream
5 tablespoons butter, chopped and divided
¾ teaspoon salt, divided
½ cup packed brown sugar
¼ cup all-purpose flour
1 teaspoon dried rosemary, crushed
½ cup pecans, chopped
2 tablespoons maple syrup

Steps:

  • Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
  • Add parsnips and/or carrots to a large microwave-safe bowl. Add 1/4 cup water and cover with wax paper. Microwave on high for 5 minutes. Uncover and add sweet potatoes. Cover and microwave 15 minutes more or until tender, stirring once. Drain and return vegetables to bowl.

3 lbs sweet potatoes (about 5 large)
4 ounces Philadelphia Cream Cheese, softened
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups post selects cranberry almond crunch cereal, crushed
2 tablespoons butter, melted
1 1/2 cups jet-puffed miniature marshmallows

Steps:

  • PREHEAT oven to 325°F Place sweet potatoes on microwaveable plate. Microwave on HIGH 8 minute Turn potatoes over; continue microwaving 9 to 10 minute or until very tender. Let stand 5 minute Cut potatoes in half lengthwise. Scoop pulp into large bowl; discard skins.
  • ADD cream cheese, brown sugar, cinnamon and nutmeg to potato pulp. Mash with potato masher to desired consistency. Spoon into 9-inch square glass baking dish.

Thought it was about time I shared this luscious sweet potato dish. It makes the house smell wonderful. These do take a bit of time, but it's worth it! We've been having these for about 40 years. Hope you enjoy them as much as we do. Leftovers, if you have any, may be frozen for later enjoyment.

3 (28 ounce) cans yams or 3 (28 ounce) cans sweet potatoes in syrup
1 cup brown sugar
3/4 cup sweet butter
1 navel orange, sliced thin
1 (20 ounce) can pineapple rings, divided
1/4 cup prepared mincemeat (optional)
6 ounces frozen orange juice
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon

Steps:

  • Combine all ingredients, except pineapple rings, in large Dutch oven .Remove 6 pineapple rings from can and set aside. Mince remaining rings and add to sweet potatoes, including juice.
