Homemade Almond Milk image

Almond milk is a delicious and healthier alternative to soy and cow milk. It's easy to make and very delicious. The longer you soak the almonds, the creamier the milk turns out.

1 cup raw almonds
water to cover
3 cups water
1 tablespoon agave nectar, or more to taste
1 pinch sea salt

Steps:

  • Place almonds in a bowl and pour in enough water to cover; soak at least 12 hours. Drain water.
  • Blend almonds and 3 cups water in a blender on low speed for 10 seconds. Turn blender off for 5 seconds. Blend almonds and water on high speed for 60 seconds. Pour mixture through cheesecloth or a nut bag into a bowl. Discard the pulp or save for another use.
  • Clean the blender and return milk to blender; add agave nectar and salt. Blend milk until smooth.

Home Made Almond Milk (Soya Joy Machine) image

Soaking your almonds is essential to making a good milk. Also I use a soya joy machine to make mine. It's very easy to use and makes the milk in minutes. One batch makes a little over a quart of milk.

- soaked almonds
- filtered water
- milk making machine
2 tablespoon(s) liquid honey (per quart of milk)
1 pinch(es) sea salt

Steps:

  • Soak your almonds in a large mouth jar over night. Make sure the water is filtered and covers the almonds.
  • In the morning drain the almonds and rinse.
  • Open your soya joy machine and fill the little basket to 3/4 full.
  • Fill the soya joy machine to the marked level on the side of the container. Attach the little nut holder to the grating blade and lock into place. Make sure its secure otherwise the nuts will leak into the liquid.
  • Turn the machine on and let it process. I generally unplug the machine and reheat the milk so it's thicker. It will say in the instructions how to do this.
  • Remove the milk to a container, add the honey and salt and stir very well.
  • Store in a pitcher in the fridge. Use it up fast, this doesn't keep for long. Use as you would any milk, just make sure you stir it well before using, the water and almond seems to separate easily.
