Homemade Devonshire cream, also known as clotted cream, is a thick, rich cream that is traditionally made in the English county of Devon. It is made by slowly heating full-cream milk until a thick, clotted layer forms on the surface. Once cooled, this layer can be skimmed off and whipped to create a smooth, spreadable cream. Devonshire cream is often served with scones, jam, and tea, but it can also be used as a topping for other desserts or as an ingredient in baking. It is a versatile and delicious cream that is sure to please everyone at your table.

CHEF JOHN'S CLOTTED CREAM
While the name doesn't exactly make the mouth water, the flavor and texture of clotted cream are the stuff of legends. The long, slow cooking sort of toasts the cream, which imparts a sweet, nuttiness that I don't think I've tasted in any other preparation. This is just delicious spread on warm biscuits or scones and topped with homemade jam.

HOMEMADE DEVONSHIRE CREAM
I found this recipe years ago in a newspaper. It's a great substitute for the real thing. In fact, I prefer it, because it's sweeter. This is great with scones and a little jam or preserves on top. Perfect for afternoon teas or brunches.

Steps:
- Beat all ingredients until stiff. Refrigerate and serve with scones and jam.
Tips:
- Use very cold cream and a chilled bowl and whisk to make the clotted cream. This will help the cream thicken more quickly and smoothly.
- Do not boil the cream, as this will cause it to curdle.
- If you do not have a candy thermometer, you can test the temperature of the cream by dropping a small amount into a glass of cold water. If the cream forms a thin skin on the surface of the water, it is ready.
- Once the cream has thickened, transfer it to a jar or container and refrigerate for at least 12 hours before using.
- Devonshire cream is best served fresh, but it can be stored in the refrigerator for up to 3 days.
Conclusion:
Devonshire cream is a delicious and versatile ingredient that can be used in a variety of desserts and dishes. It is a simple recipe to make, but it does require some time and patience. By following these tips, you can make sure your Devonshire cream turns out perfect every time.
