4 cups old fashioned oats
2 cups sweetened coconut, shredded
2 cups sliced almonds
3/4 cup vegetable oil
1/2 cup honey
1 1/2 cups dried apricots, diced
1 cup dried fig, diced
1 cup dried cranberries
1 cup cashews, roasted

Steps:

  • Preheat over to 350 degrees.
  • Toss, oats, coconut and almonds together in large bowl and set aside.
  • Whisk together the oil and honey in small bowl and pour over the oat mixture and stir with wooden spoon until all the oats, coconut and nuts are coated.
  • Pour into a 13x9 baking pan and bake. Stir occasionally with spatula until mixture turns a nice golden brown about 45 minutes.
  • Remove granola from oven and allow to cool, stirring occasionally. Add the apricots, figs, cranberries and cashews. You can put whatever mix of dried fruit in that you please. I have even started to put in a cup of dark chocolate chips after the oats mix has cooled.
  • Great snack!
  • Store cooled granola in airtight container.

Tips:

  • Use a variety of oats. This will give your granola bars a more complex flavor and texture. You can use old-fashioned oats, quick-cooking oats, or even steel-cut oats.
  • Toast your oats before baking. This will help to bring out their flavor and make them more crispy.
  • Use a variety of nuts and seeds. This will add flavor, texture, and healthy fats to your granola bars. Some good options include almonds, walnuts, pecans, chia seeds, and flax seeds.
  • Add dried fruit for sweetness. Dried cranberries, raisins, and apricots are all good choices.
  • Use a natural sweetener, such as honey or maple syrup. This will help to keep your granola bars healthy and delicious.
  • Press the granola mixture firmly into the pan before baking. This will help to keep the bars from crumbling.
  • Let the granola bars cool completely before cutting them. This will help to prevent them from falling apart.

Conclusion:

Granola bars are a delicious and healthy snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. With so many different recipes to choose from, you are sure to find one that you love. So next time you are looking for a quick and easy snack, reach for a granola bar.
