HOMEMADE HONEY GREEK YOGURT
There is no comparison between the delicate, mild flavor of homemade yogurt and what comes in a grocery tub. This recipe makes a versatile, slightly honeyed, thick, creamy, and delicious Greek yogurt with no special tools or machines. This batch of yogurt can be frozen into small portions before straining to act as the 'starter' for following batches of yogurt.

Steps:
- Combine the first 3 ingredients and cook slowly on medium heat until it forms a hard ball when you drop it into ice water. It took me about an hour. As the mixture gets close to being done, the bubbles from the boil will get a lot smaller and closer together. Pour the mixture onto a buttered cooking sheet. When cooled, pull with buttered hands. Stretch, twist and pull until firm (this is the fun part! ;)) and then form into long ropes and place on waxed paper. Cut into bite size pieces. If you want, you can roll them in powdered sugar and wrap them in wax paper.
HOMEMADE HONEY PEANUT BUTTER
I decided to start making my own peanut butter when I read the ingredient list on a peanut butter jar label. While peanuts are good for you, the unhealthy additives and hydrogenated oils are not. This is all natural with no preservatives and has a much better flavor than store-bought peanut butter. Store in a sealed container in the refrigerator.

Steps:
- 1. Combine the flour, baking powder and salt.
- 2. Cut in the coconut oil, OR stir in the olive oil(I do this in the food processor, but you can also do it by hand.)
- 3. Add the honey to the hot water and stir to combine. Gradually add this to the flour while the food processor is running(or by hand). Process, or stir until combined and knead a few times. If dough is too wet, add a little more flour. You want a nice dough that comes together in a ball but is still soft.
- 4. Cover the dough and let it rest for 10-15 min. Divide dough into 16 pieces and roll in balls. Roll out fairly thin into 6 in. rounds.
- 5. In a small skillet or on a griddle that has been heated to medium heat, cook the tortillas for 30 seconds to a minute, until you start to see the surface bubbling up. Flip it and cook the other side. Keep warm in a towel while you finish all of the tortillas. (I use a flat griddle and cook 2 or 3 at a time.)
HOMEMADE LAVENDER HONEY FROM SOUTH WEST FRANCE
A quick and easy home-made honey recipe from the Auberge in South West France! I use lavender honey so much in my cooking, that I thought it was about time I made my own - given that I have about 30 lavender bushes! As well as giving an amazing and subtle flavour to your recipes, it also makes a wonderful gift for a fellow foodie. I plan on making my own lavender honey all the time now, as even in France, it is quite expensive to buy. You can increase the quantities to make more jars - just remember to keep the flower to honey ratio the same.
