2 egg yolks
3 cloves garlic, finely minced
2 tablespoons fresh lemon juice

1 ½ cups vegetable oil

Steps:

  • Bring a saucepan of water to a boil. Prepare a bowl of ice water and have it standing nearby.
  • Place basil leaves into boiling water and blanch until leaves are bright green and slightly soft, about 10 seconds. Remove basil leaves with a fine mesh strainer and place into ice water to stop the cooking process. Drain basil, wrap in a paper towel, and gently squeeze to remove excess moisture.
  • Place egg yolks into a container with a base slightly larger than the base of a stick blender, such as a measuring cup or large beer glass. Add garlic, lemon juice, salt, cayenne pepper, black pepper, basil leaves, and Dijon mustard to egg yolks. Pour vegetable oil over the top.
  • Push stick blender all the way to the bottom of the container. Pulse blender 6 or 8 times, about 1 second per time, until mixture begins to emulsify on the bottom. Once mayonnaise begins to form, raise the stick blender slightly in the container and continue to blend until all oil has run through the blender, mayonnaise is thick, and basil is finely chopped, 10 to 20 more seconds. Taste and adjust seasonings. Transfer to a bowl. Mayonnaise will keep, refrigerated, for 2 to 3 days.

1 1/2 teaspoons Dijon mustard
2 tablespoons distilled white vinegar
Kosher salt
2 cups canola oil

Steps:

  • Add the egg yolks, Dijon mustard, vinegar, 1 1/2 teaspoons kosher salt, and 2 tablespoons water to the bowl of a food processor fitted with the blade attachment. Blend until the ingredients are combined.
  • Pour the oil into a measuring cup with a spout. With the processor running, pour in the oil very slowly, in a steady stream. It is important to add the oil slowly because if added too fast, the mayonnaise can break (see Cook's Note). This will take about 3 minutes. You will begin to see the mixture resemble mayonnaise after about half the oil has been added. As soon as all the oil has been added, transfer to an airtight storage container. Keep the mayonnaise refrigerated for up to 2 days.

1/2 head roasted garlic
3 lbs. russet potatoes
6 hard-boiled eggs
1/2 medium red onion, minced
Salt and pepper to taste
1/4 cup dried dill
1/4 cup regular mustard

Steps:

  • To make the garlic mayonnaise, place all ingredients except oil in blender. Blend on high until all ingredients are well blended. Add the oil in a slow steady stream. If the mayo is too thick add a few drops of lemon juice. (The extra mayo can be kept in the refrigerator for up to a week. It's great on sandwiches and in chicken salad.)
  • For the salad, cook the potatoes in a pressure cooker for 10-15 minutes, depending on the size of potatoes. Boil eggs for 10 minutes. After both have cooled, peel, dice and add to bowl. Add the onions and then salt and pepper to taste. Add dill, mustard and mayo to the consistency that you like--some people like their potato salad dry, some like it very moist. Refrigerate overnight for best flavor.

If you serve poached salmon when it has just been cooked (and is barely cold) with some freshly made salads and a good homemade mayonnaise, it's absolutely magical.

2 to 2 1/2 pound (900 grams to 1.1 kilograms) freshly poached salmon
Tomato and Mint Salad
Cucumber and Fennel Salad
Piped Potato Salad
Egg Mayonnaise, recipe follows
Tiny spring onions
Lettuce
Watercress
Segments of lemon
2 egg yolks, free-range* (See Disclaimer)
1/4 teaspoon salt
Pinch of English mustard or 1/4 teaspoon French mustard
1 dessert spoon white wine vinegar
8 fluid ounces (250 milliliters) oil (sunflower, arachide or olive oil or a mixture)- we use 6 fluid ounces (175 milliliters) archide oil and 2 fluid ounces (50 milliliters) olive oil
4 free-range eggs
3 to 4 tablespoons homemade mayonnaise
1/2 teaspoon finely chopped chives
Salt and freshly ground pepper to taste

Steps:

  • Poach the salmon; leave to cool. Meanwhile make the Tomato and Mint Salad. Remove the cores from six tomatoes and quarter. Sprinkle with a little salt, sugar and black pepper. Toss immediately in a little French dressing; sprinkle with 1 to 2 teaspoons of chopped mint and basil.
  • Slice a medium cucumber, sprinkle with salt, 1 to 2 dessertspoons of wine vinegar and plenty of sugar. Stir in 2 teaspoons of finely chopped fennel.
  • To assemble the Salmon Mayonnaise, put a portion of salmon on each plate when it is just cold. Garnish with a little lettuce, pipe some Potato Salad onto the lettuce and put a little Tomato and Cucumber Salad on the plate as well as one spoonful of egg mayonnaise. Garnish with tiny spring onions and watercress and a segment of lemon. Additional mayonnaise can be served separately or put into a bowl on each plate.
  • Piped Potato Salad: Add French dressing, finely chopped parsley, chives and mayonnaise to 1 litre (1 3/4 pints) stiff, freshly mashed potato to taste. Pipe onto individual leaves of lettuce.
  • Mayonnaise: Most people don't seem to be aware that mayonnaise can be made, even with a hand whisk, in under five minutes. The great secret is to have all your ingredients at room temperature and to drip the oil very slowly into the egg yolks at the beginning. Good quality ingredients are essential to a successful mayonnaise.
  • Put the egg yolks into a bowl with mustard, salt and the white wine vinegar. Put the oil into a measuring jug. Take a whisk in one hand and the oil in the other and drip the oil on to the egg yolks, drop by drop, whisking at the same time. Within a minute you will notice that the mixture is beginning to thicken. When this happens you can add the oil a little faster, but not too quickly or it will suddenly curdle. Taste and add a little more seasoning and vinegar if necessary.
  • If the mayonnaise curdles, it will suddenly become quite thin, and if left standing the oil will start to float to the top. You can easily rectify the situation by whisking another egg yolk or 1 to 2 tablespoons of boiling water into the mayonnaise, half a teaspoon at a time, until it emulsifies again.
  • Lower the eggs gently into boiling salted water, bring the water back to the boil and hard-boil the eggs for 10 minutes in boiling water. Drain and put immediately into a bowl of cold water. (Eggs with a black ring around the yolk have been overcooked.) When cold, shell and slice in half lengthways. Sieve the yolks and mix the sieved egg yolk with mayonnaise. Add chopped chives and salt and pepper to taste. Fill into a piping bag and pipe into the whites. Garnish with a sprig of parsley or chervil and serve on a bed of lettuce.

• 1large egg yolk
• 2tablespoonsDijon mustard
• 1tablespoon(or more) fresh lemon juice
• 1/2cupvegetable or olive oil

• Kosher salt
Salmon Cakes
• 3/4poundsalmon fillet, preferably sockeye (previously frozen is fine)
• Vegetable or olive oil (for brushing and cooking)
• 1 1/2poundsrusset potatoes, peeled, cut into 2-inch chunks
• 1teaspoonkosher salt plus more for seasoning
• 1large egg
• 1large egg yolk
• 2tablespoonsfinely chopped fresh dill
• 2scallions, thinly sliced
• 2teaspoonslemon zest
• Freshly ground black pepper or crushed red pepper flakes (optional)

Steps:

  • Combine egg yolk, Dijon mustard, and lemon juice in a blender. Blend on high, leaving the lid partially open, until smooth. With motor running, slowly pour in oil in a thin stream; blend until combined. Season to taste with salt and more lemon juice, if desired. Set aside 1/3 cup for salmon cakes. Stir dill into remaining mayonnaise. Place in small bowl; cover and chill. Salmon Cakes Preheat oven to 400°. Brush salmon with oil. Place salmon in an 8x8" baking dish and bake until flesh is just opaque, about 12 minutes; let cool. DO AHEAD: Salmon can be cooked 1 day ahead. Wrap in plastic and keep chilled. Place potatoes in a medium saucepan; add water to cover by 2 inches and season with salt. Bring to a boil over high heat; reduce heat and simmer until potatoes can be easily pierced to the center with the tip of a knife, 5-10 minutes. Drain potatoes and pass through ricer into a large bowl; set aside. Remove any bones and skin from cooked salmon and discard; place flesh in a medium bowl. Using a fork, gently pull apart fish into large flakes. Line a baking sheet with parchment paper; set aside. Lightly beat egg and egg yolk in a small bowl to blend. Stir egg mixture, dill, scallions, lemon zest, and 1 tsp. salt into reserved potato purée until just combined. Fold in reserved 1/3 cup Dijon mayonnaise and flaked fish. Season to taste with salt and black pepper or red pepper flakes, if desired. Using a 1/3-cup measuring cup, scoop mounds of batter onto prepared baking sheet. Cover loosely with plastic wrap and chill for at least 1 hour and up to 4 hours. Heat a large skillet or a griddle over medium-low heat; coat surface with 1 Tbsp. oil. Shape salmon cakes into 1/2-inch-thick rounds. Working in batches, wiping skillet clean after each batch, and coating skillet with 1 Tbsp. oil each time, cook salmon cakes, gently flipping with a flat spatula halfway through, until lightly browned, about 5 minutes per side. Serve with remaining Dijon mayonnaise alongside.
